Afterbeing awarded the KobzarWriters Scholarship offered by theTaras Shevchenko Foundation, Ipacked my bags and left for Toronto.Registering at the frontdesk, I scanned the list of studentsand was elated to see names thathad to be Ukrainian. We all worename tags and next day OksanaBashuk Hepburn approached me.“You’re Ukrainian?” sheasked with a smile.“Yes. And there are others.We must find them.”I remembered the name MaryPankiw and we looked for her inthe lunchroom.“Well,” Mary said with thesame big smile. “And this is LidaSomchynsky.”And Lida said, “And this isEileen Small, she’s Ukrainian too.”Oksana from Quebec, Maryfrom Manitoba, Lida from Alberta,Eileen from Ontario and Ifrom Prince Edward Island metthat evening. So much to talkabout!The next day, my mentor,Marsha Skrypuch, met with us ina Thai restaurant. And the dayafter that, we had dinner togetherin a nearby Polish restaurant.That evening we read threeminutes of our stories (Mary readher beautiful, moving poetry); thecomment we heard, not only fromfaculty but from the sixtysomethingother students whoalso read, was: “So many herewriting about Ukraine.”Our Humber experiencebonded us and I wish my newlydiscoveredUkrainian writerfriends good luck in publishingtheir stories and poetry.I am grateful to the TarasShevchenko Foundation. Це означало,що кожна пристойновдягнена людина могла зайтиі безкоштовно пообідати вдомі гостинного вельможі.Кухар, якому щодня доводилосяготувати на невизначенукількість гостей, вийшов ізскрутного становища такимчином. Він вигадав нову страву,яка готувалася швидко йпросто, до того ж легко ділиласяна порції. М’ясо не тушкувалося,а спочатку обсмажувалося,потім готувалосяразом із соусом (підливою).Пропонуємо і вам приготуватисправжній бефстроганов.На 1 кг яловичої вирізки:2 середні цибилуни, 2 ст.ложки вершкового масла,1,5 склянки сметани, 1 ст.ложку борошна, сіль, перецьдо смаку.М’ясо обсушити, нарізатитонкими шматочками. Обсмажитиу вершковому масліна добре розігрітій сковородідо апетитної шкуринки.Додати подрібнену цибулю,обсмажити, не даючи їйпідгоріти. А потім вилитисметану. Тушкувати 10 хв.
