esulted in greater availability <strong>of</strong> fresh asparagus throughout <strong>the</strong> year. This extendedavailability <strong>of</strong> fresh-market asparagus, toge<strong>the</strong>r with <strong>the</strong> overall consumer awareness <strong>of</strong>, andpreference for, healthy foods, may be mostly responsible for a two-fold rise in per capitaannual consumption <strong>of</strong> fresh asparagus over <strong>the</strong> past decade. 144 <strong>The</strong> increase in productavailability throughout <strong>the</strong> year also may have resulted in lower retail prices for consumersin 2005, especially in those months when U.S. production is minimal.
