siasm about various dishes made of cuttlefish, frogfish, octopus, sardines…Very pleasant staff will greet you in the tavern situated inthe gateway. The way to the tavern is pointed by a smallneon sign. Each guest will certainly find the bar very interesting. It is actually the old trawler, the lateral side ofwhich has been turned into a bar, while the other partsticks out freely and tempts you to lean and check if thatis indeed a trawler. There is a small intimate area in theattic that all the guests are particularly fond of. Althoughthe tavern Bota is visited mostly by business people ofhigher financial status, those of the lower financial statuscan also enjoy delicious meals. Duje Vrca, the chef, has“hundered species of fish” on the menu and as manyrequests to fulfil.- Our menu is here mostly because of the prices. However,we do not hold to it strictly. Our offer is different everyday. Fish is delivered fresh, sometimes three times a day,and we never know what the sea will give us. Therefore,we offer what we were delivered straight from the sea. That’s the way we organize our menu. – explained theowner, and proudly added that the family owns shellbreeding site in Mali Ston channel. Besides that, naturalgroceries are very important to the Šare family. Theyproduce more than 50 groceries, from eggs, lettuce…Mr. Šare wishes to install small displays in the corners ofthe tavern. These displays will enable guests to see photosor short films concerning breeding, catching, deliveringand preparation of fish and other groceries. The tavern in Zagreb encompasses 130 m 2 and it willsoon be extended to an outer terrace with additional100 sitting places. A year ago, the location of the tavernwas an abandoned blacksmith shop. A very few peoplebelieved that such a harmony of specialties and fine seafood prepared in a traditional way, the way those disheswere prepared during the Republic of Dubrovnik, couldbe made here. Božo Šare, the owner of the tavern, hadfound one such book and used it during his work in thecatering industry. All of his restaurants bear the same name. He explainedthe meaning of the word – bota. In the ancient times itwas the cold area beneath the roof of a house.Božidar Šare has been in the catering business for morethan twenty years. He begun his ideological path byopening a café bar in Ston, a town situated on the farnorthwest of the Ston channel, and on the Ston causewaythat connects peninsula Pelješac with the land. Thetown is enclosed by 980 meter long walls that form an irregularpentagon. Mali Ston, the walls of which are connectedwith the walls of Ston, is an integral part of thetown. The first Bota Šare restaurant was situated withinthese walls. Medieval castle needed to be renovatedand reshaped into the unique facility. That facility todayoffers the atmosphere of the long forgotten times. All the members of the Šare family equally participate inthe business: wife Tanja, children Pero, Zrinka, Antonela,Josip, Tomo, as well as the youngest Luka. Great effortsand love resulted in the restaurant in Split, which successfullyoperates for four years, and then the one in Zagreb.Croatia has obviously become too small for theŠare family.- It is interesting you mentioned it since a few days agoProstor na kojem je danas taverna prije godinu danabila je zapuštena kovačnica / A year ago, the locationof the tavern was an abandoned blacksmith shopHrana se priprema na tradicionalan način /Food prepared in a traditional wayI received a very interesting offer – to open a restauranton Manhattan. But it will have to wait for some time, since I am going to be very busy soon. I am going tobuild a ten million euro facility in the Mali Ston channel. It would be the place where people could literally observethe catching of the fish or shells, the process oftheir cooking. The idea is that everything is hundred percentnatural, and the facility would be open 24 hoursa day. In addition to the top quality vines, top qualityfood, the facility also has to meet high standards so thatguests could feel themselves free and natural – BožoŠare shared his plans with us.With numerous brilliant ideas related to the future inCroatia, it is no wander that such a brilliant offer camefrom America, whereas the effort of the Šare family hasrecently been recognized and awarded in the Europeanstage. Namely, the committee of this year prestigiousgastro manifestation International Award for Tourist, Hoteland Catering Industry has awarded the fish restaurantBota Šare on Kaptol the best on the Mediterraneanand in this part of Europe. The secret committee has obviouslyfelt the meaning of genuine food flavoured witholive oil, with genuine fish and shells and all of that in thecosy environment.55
