Soy Is<strong>of</strong>lavones as Bioactive Ingredients <strong>of</strong> Functional Foods 345In spite <strong>of</strong> a myriad <strong>of</strong> patented processes and products containing soy IFs, includingfunctional foods currently available for health-conscious consumers, most <strong>of</strong> the metabolicmechanisms <strong>of</strong> the specific health benefits attributed to IF consumption have not beenclearly established and require further research.
