Soy Isoflavones as Bioactive Ingredients of Functional Foods 345In spite of a myriad of patented processes and products containing soy IFs, includingfunctional foods currently available for health-conscious consumers, most of the metabolicmechanisms of the specific health benefits attributed to IF consumption have not beenclearly established and require further research.
