Introduction1.1 Overall significanceUnfavourable organism response to food can be divided into toxic and non-toxic reactionwith abnormal clinic response <strong>of</strong> the organism. As allergy is called such an organismresponse mediated always by the immune system in contrast to food intolerance. Foodallergy can be further divided into reaction <strong>of</strong> the organism bound to IgE and without IgEreaction. Hypersensitiveness <strong>of</strong> the immune system can be classified into types I - IV. Type Iis reaction <strong>of</strong> mast cells with bonded IgE antibodies for the presence <strong>of</strong> antigen (Gray andChan, 2003). The prevalence <strong>of</strong> allergic reaction varies geographically and may depend <strong>of</strong>the frequency <strong>of</strong> consumption, the age <strong>of</strong> introduction into the diet and the genome (Öetles,2005).1.2 Physiological functionIn case <strong>of</strong> food allergies mediated by IgE it is possible, especially according to the clinicalsymptoms, to define two forms <strong>of</strong> allergic reactions. Food allergic reactions can have adifferent manifestation in localization, in time horizon as well as in the importance <strong>of</strong>symptoms, which represent a wide scale <strong>of</strong> evidence from the most simple up toanaphylactic shock. The first form appears already shortly after birth and in the earlyinfancy. The sensibilization is elicited by a reaction in the gastrointestinal tract and is mostfrequently manifested as atopic dermatitis. The second form appears in particular at a laterage as a respiratory allergy, in case <strong>of</strong> which are <strong>of</strong>ten the sensitising agents also inhalationallergens (cross reactive allergens) (Metcalfe et al.2003).From the acute symptoms is <strong>of</strong>ten present nausea, emesis and diarrhoea, and in seriouscases even bloody diarrhoea. The pathological-anatomical picture <strong>of</strong> the allergic reaction ischaracterized by inflammatory damage <strong>of</strong> intestinal mucosa with the affection <strong>of</strong> therespiratory tract, particularly by bronchoconstriction (Gray and Chan, 2003).1.3 Nomenclature and legislationThe <strong>of</strong>ficial list <strong>of</strong> allergens was created by the World Health Organization and InternationalUnion <strong>of</strong> Immunological Societies.
