Sweet potato and butternut squash soup<br />

Recipe from Heather Williams<br />

Ingredients<br />

2 tbsps oil or 25g butter<br />

2 onions finely chopped<br />

2 cloves garlic, crushed<br />

1 heaped teaspoon ground coriander<br />

1 heaped teaspoon ground cumin<br />

2cm fresh root ginger, peeled and grated or 1 heaped teaspoon ground ginger<br />

1 teaspoon chilli powder- optional<br />

2 teaspoons honey<br />

600g sweet potato, peeled and diced<br />

600g butternut squash or marrow or pumpkin, peeled and diced<br />

2.5 litres vegetable stock<br />

1 x 400g tin chick peas – optional<br />

Salt and black pepper<br />

To serve – swirl of natural yoghurt or cream and fresh coriander leaves<br />

Method - Serves 8<br />

1. Heat oil or butter in large pan and cook onion and<br />

garlic for 10 minutes over a medium heat covered<br />

with a lid.<br />

2. Add spices and honey and stir for 30 seconds.<br />

3. Add sweet potato and butternut squash and stock,<br />

bring to the boil, cover and then simmer for 15 – 20<br />

minutes. Add chick peas if using.<br />

4. Cool slightly and liquidise to a very smooth<br />

consistency, adding more water if necessary.<br />

5. Serve with swirl of yoghurt or cream and coriander<br />

leaves.<br />

We’re Making Plans for Nigel!<br />

Neil Butterworth in Brenda’s Garden Sadly, we recently lost Mr. Newhey, Taxi Nigel/ Newhey Nigel, as he was<br />

known to most of the people of Newhey. When a local lad such as Nigel<br />

suddenly disappears there is a big hole left in our community. He touched<br />

many people’s lives in an extremely positive way, always courteous, good<br />

humoured and gentlemanly. Spontaneous flowers appeared at the site of<br />

Newhey Cars following his untimely death, and there was standing room<br />

only outside at his Funeral on the 9th September.<br />

There have been collections around the village in the pubs and shops and a number of<br />

people have asked me if there could be a more permanent memorial, perhaps a bench<br />

located in Brenda’s Garden? These initiatives are really brilliant, but I think we can do even better than that, what about turning<br />

the open land adjacent to the school, Oak Street and Newhey Road into “The Nigel Stott Memorial Gardens”. This surely would<br />

be a fitting memorial to Mr. Newhey, and we could place a variety of items into the gardens, which would act as a more long<br />

lasting celebration of his life, perhaps incorporating benches that have been purchased by the various collections above. I have<br />

made initial enquiries into the use of the land for this purpose and have received positive responses, but please let me know what<br />
