Business spotlight SoHo Subs 8040 Wiles Road, Coral Springs | 954-998-7799 When is a sub shop not a sub shop? When Jeff Lassen decides to open a high-end sub shop. “I would say that in the world of sub shops, SoHo is the Four Seasons. The build out took almost a year as we paid attention to every single detail. The floor alone is the largest penny floor in the country. It is a must see,” Lassen said. SoHo Subs attributes its success and status to using only the best ingredients money can buy, from the Boars Head meats to the Hellmann’s <strong>May</strong>onnaise and the fresh baked bread. The Italian bread, which is baked on the premises every day, comes seeded or seedless. Soho Subs also offers the soft sub rolls most Floridians are used to. The staff dress is a step up from the usual shops. The employees are required to wear long sleeve white dress shirts, black bow ties, red aprons, and black pants. Among the specialties, like SoHo’s Italian bread, is the hot pastrami on rye. The rye bread is made fresh daily. Every day at 6am the kitchen prepares fresh chicken for the chicken parmigiana hero and the chicken cutlet sandwich. Also on the menu is Juniors Cheesecake from Brooklyn NY. Currently, SoHo Subs offers more than 170 different beverage options and about 65 chip options. Lassen grew up in the deli world in New York. “My great grandfather in Brooklyn owned Lassen’s Deli and he moved it to Lynbrook Long Island. My grandfather took it over and has been in the business his entire life. He also opened “The Viking Manor,” a smorgasbord place on Long Island. My family has always been in the food and deli business. It is in my blood,” Lassen said. Lassen can be picky about the food and service at SoHo Subs since he owns Rite Way Auto Transport. His main focus on SoHo is the quality, not the profit. “This is almost a hobby for me if you want to call it that. My point is there will never be one corner cut to make a few extra dollars. I’d rather make less but be known for pure quality and a great experience,” he said. One of his more memorable experiences is David Chapelle ordering from the sub shop when he was in Coral Springs doing a show. The feedback he received was that Chapelle loved it and ate one and a half subs. At only two and half months old, SoHo Subs is already a hit. From the upscale décor to the high-quality food, SoHo has a faithful following and Lassen loves it. “I love to hear my customers say, ‘Wow, this place is awesome and it is my new favorite lunch spot!’ I hear this every single day. Every week is a record week and we are growing like wildfire,” he said. SoHo Subs will be opening a store in Boca Raton later this year.
