Vegan Apple Bread BY GINA COLFER (AGRIBUSINESS) Ingredients 1½ cups whole wheat or rice flour 1 tsp baking soda 1 tsp baking powder 2 tsp cinnamon ½ tsp salt ½ cup coconut sugar 1 cup apple sauce 1/3 cup olive or avocado oil 2 tsp pure vanilla 2 tbsp flax meal (whisked w/ 6 tbsp of water to make two flax eggs) 1 cup chopped walnuts 2 ½ cups finely chopped apples Directions Sift together dry ingredients. Beat together oil, sugar and vanilla. Add flax meal mixture, beat for a few more seconds, then add flour mixture. Stir with spatula to get ingredients mixed, add apples and walnuts and combine fully. Pour batter into oiled bread pan. Bake at 350 F for 40 minutes or until fork comes out clean. Cool on rack and drizzle sugar mixture when serving. Enjoy!
