“(Processing) is a great career path for new
people entering the field,” Thompson said.
He explained that many of the most
seasoned processors in the area are or have
retired. Rockdale Locker already hired experienced
head butcher Tim Clasen to head up
operations.
Thompson said he expected Rockdale
Locker to open sometime in October or later
this fall – “the sooner the better.”
Meat will hang for 20 days instead of the
industry-standard 11 days, he emphasized.
That’s because the longer the meat is hung,
the better the flavor is, he said.
“We’re hoping to expand this service into
the community,” Thompson said. “Our goal is
to put out a really good product.”
Meanwhile, Moore Creamery’s opening
day has been pushed back, likely into 2022,
due to increasing steel prices and a backorder
of creamery equipment, Moore said.
She expected to install the necessary equipment
sometime around Christmas.
The creamery will start with small-scale
cheddar cheese production with plenty of
room to grown, Moore said. She also has local
interest in creating specialty cheeses.
The Moore Local retail outlet reopened this
spring, and the Moores have now also opened
a coffee shop and retail store in Bellevue.
Maquoketa’s Moore Local will not offer
a drive-thru window as it did on West Platt
Street, but there will be ice cream, coffee,
and some sandwiches, as well as additional
locally sourced inventory, including Edgewood
Meats, candy, snacks, frozen meals,
cheese curds, and, of course, cheddar bricks
by Moore Family Farms.
“We’re continuing to add product lines,”
Moore explained. “If you’ve been in here
before, you need to see it again.”
When full-time staff gets into place, Moore
Local will begin serving lunches and other
meals, likely in September or October, Moore
said.
“We’re just excited to get it going and that
there’s been so much genuine interest from
the community,” Thompson said.
“Yeah, we’re excited for people to see
everything we’re working on here,” Brandon
Moore added. n
“We’re hoping to
expand this service
into the community.
Our goal is to
put out a really
good product.”
