This makes it possible for me to maintain my independence and objectivity. I know that chefs often ask for a personal appointment when they lose a star. We welcome everyone at our headquarters, we show them the trends in inspectors logs and letters to the editor. But they do not get to meet me. The Guide has 90 inspectors in the world, 70 in Europe, 10 in Asia and 10 in the United States. In France, 7891 establishments were rated, including 3419 restaurants (1,500 in Paris), with 15 inspectors. Do you actually visit all these hotels and restaurants each year? We visit all establishments in the Guide every two years. The starred restaurants are visited each year. This is apart from other restaurants that might in future be included in the Guide. An inspector makes 244 visits a year. Do you collaborate with freelance inspectors? Un inspecteur réalise 244 visites par an. Faites-vous appel à des inspecteurs en free-lance? Non.
