SØLID Beetroot Soup Soupe de Betterave Sopa de remolacha Ingredients: • 600 grs beetroot, peeled and grated • 1.5 litres vegetable stock • 1 onion, chopped small • 1 Tbsp sunflower oil • 2 celery stalks, chopped • 1 Tbsp freshly chopped dill • 300 gr. potatoes, peeled and diced • 100 ml. sour cream • Salt and pepper Instructions: 1. Heat the sunflower oil in a large pan and gently fry the celery, potatoes, onion and beetroot for around 5-6 minutes. Stir constantly. 2. Next add the vegetable stock and bring to the boil. Cover the pan and simmer for around 35 minutes. 3. Blend the soup until nice and smooth. Return to the pan and warm through again. Stir in the dill and season to taste. 4. When you are ready to serve the soup, add a tablespoon of soured cream in the centre of each soup and top with a sprig of dill for garnish. 36 Gas�tron�ø�mad Ingrédients: • 600 grs. de betterave, pelée et râpée • 1,5 litres de bouillon de légumes • 1 oignon, émincé • 1 CS d’huile de tournesol • 2 branches de céleri, émincés • 1 CS d’aneth frais, haché • 300 grs. de pommes de terre pelées et coupées en dés • 100 ml. de crème fraîche • Sel et poivre Instructions: 1. Chauffer l’huile de tournesol dans une grande poêle et faire revenir le céleri, les pommes de terre, les oignons et les betteraves environ 5-6 minutes. Remuer constamment. 2. Ajouter le bouillon de légumes et porter à ébullition. Couvrez la casserole et laisser mijoter pendant environ 35 minutes. 3. Mixer la soupe et versez-la à nouveau dans la casserole et réchauffez. Incorporer l’aneth et assaisonner selon votre goût. 4. Lorsque vous êtes prêt à servir la soupe, ajoutez une cuillère à soupe de crème fraîche au centre de chaque bol et garnir avec un brin d’aneth. Ingredientes: • 600 grs. de remolacha fresca, pelada y rallada • 1,5 litros de caldo de verduras • 1 cebolla, picada • 1 CS de aceite de girasol • 2 tallos de apio picados • 1 CS de eneldo fresco, picado • 300 grs. de patatas, peladas y en cubitos • 100 ml. de nata • Sal y pimienta Instrucciones: 1. Calentar el aceite de girasol en una sartén grande y saltear el apio, patatas, cebollas y remolachas unos 5-6 minutos. Revuelva constantemente. 2. Añadir el caldo de verduras y llevar a ebullición. Cubra la cacerola y cocine a fuego lento durante unos 35 minutos. 3. Triture el caldo y viértalo de nuevo en la cacerola. Caliéntelo y añada el eneldo y sazone al gusto. 4. Cuando vaya a servir la sopa, agregar una cucharada de nata en el centro de cada plato y decorar con una ramita de eneldo.
