TOWARDS A NEW GUIDE?
In New York this year the Guide
added 114 new Bib Gourmands.
Does this change the style of
the Guide, has it become less
elitist?
No, the style does not change.
The Bib Gourmand has existed
for many years and I have always
talked a lot about it. The landscape
of the restaurant business is
changing and therefore we have
to inform our readers of these
restaurants with excellent value
for money. These are often led by
new young chefs who are starting
out on their own. In France, which
has a total of 600 Bib Gourmands,
there are more Bib Gourmands
than starred restaurants.

Dans le guide de New York vous
avez ajouté 114 nouveaux Bib
Gourmands. Le style du guide
est-il en train de changer, devient-il
moins élitiste?
Non, le style ne change pas. Les
Bib Gourmand existent depuis de
très nombreuses années et j’en ai
toujours beaucoup parlé. Le paysage
de la restauration est en train
de changer et nous informons nos
lecteurs de ces restaurants d’un
excellent rapport qualité prix, souvent
tenus par de jeunes chefs qui
se mettent à leur compte pour la
première fois. En France, avec
un total de 600 Bibs Gourmands,
nous avons plus de Bibs que
d’étoilés.

su estilo, se hace menos
elitista?
No, el estilo no cambia. El Bib
Gourmand existe desde hace muchos
años y siempre he hablado
mucho sobre él. El paisaje de la
restauración está cambiando y
en consecuencia informamos a
nuestros lectores de estos restaurantes
con una excelente relación
calidad-precio. A menudo están
dirigidos por jóvenes chefs que
se instalan por primera vez por su
cuenta. En Francia, con un total
de 600 Bib Gourmands, tenemos
más Bibs que restaurantes con
estrellas.
