Cantaloupe Pickle (Sweet)<br />

Soak pieces of rind. It or 2 inches<br />

square in vinegar 1 week or more. Put<br />

2 oloves in each piece. Weigh rind<br />

and use ~ as much sugar in weight as<br />

rind. Boil sugar and water a minute<br />

or two. Add rind and boil until tender.<br />

About 45 minutes or 1 hour. There should<br />

be enough water to cover rind. When<br />

tender. pack in jars. Cook syrup down<br />

for about 20 minutes. Fill cans with<br />

syrup.<br />

Carrot Salad<br />

Put 4 medium carrots and one lemon<br />

thru food c~opper. Add i cup sugar.<br />

Place on ice and chi~l. Serve on<br />

sliced head lettuce. Top with<br />

whipped ceam to whioh has been<br />

added a little mayonn~ise.<br />
