Five pounds currants, 5 pounds sugar, 1 pound<br />
seeded raisins, 5 oranges, rind of 3. Cook 20 minutes.<br />

2 quarts berries, 1 pineapple, equal parts sugar<br />
and fruit, peel and chop pineapple, add berries and<br />
sugar, and cook well.<br />

Five pounds pitted cherries, 5 pounds sugar, 2Y2<br />
pounds seeded raisins, 4 oranges, 1 lemon. Use all<br />
the orange and lemon; chop the rind very fine and<br />
boil all together, good, for one hour.<br />

Ginger Pears<br />
Select sickle pears 01' the small August pear, left<br />
whole. To 4 pounds pears, add 3 pounds sugar, add<br />
2 ounces green ginger root, cut ginger in tiI~y pieces,<br />
and cover with lemon juice, make syrup of sugar<br />
and 1 pint vinegar; add ginger and lemon juice, and<br />
grated rind of 2 lemons and a very few cloves. Drop<br />
pears in a few at a time and cook until transparent.<br />

One quart cherries pitted, 1 quart currants, 1<br />
quart red raspberries, 1 quart gooseberries. Put<br />
goosberries at the bottom of the kettle, cherries<br />
next, currants next, and red raspberries on top. To<br />
every pound of fruit add % pound of sugar. Boil<br />
