PIES<br />
Mince Meat<br />
Two and a half pounds lean meat, 1 pound suet;<br />
cool in water it is cooked in; add 8 cupfuls of apples,<br />
2 pounds chopped raisins, 1 pound currants, 1<br />
pound dates, l/2 citron, shredded fine, 11/2 cupfuls<br />
molasses, 1 quart sweet cider, 3 cupfuls brown sugar,<br />
1V2 cupfuls white sugar, 2l/ 2 tablespoonfuls salt,<br />
1 tablespoonful allspice, 1 tablespoonful cinnamon,<br />
11/2 teaspoonfuls mace, 2 teaspoonfuls cloves, 1/ 2 teaspoonful<br />
pepper, 1 nutmeg. Simmer this mixture<br />
1 1 /2 hours. Add juice of 2 lemons, 1112 cupfuls preserved<br />
strawberries.<br />

1, 2, 3, 4 Pie Crust<br />
One cupful flour, 2 tablespoonfuls lard rounding<br />
full, 3 tablespoonfuls water. Salt.<br />

Raisin Pie<br />
One cupful raisins, 1 cupful sugar, 1 cupful water,<br />
1 tablespoonful flour, 1 tablespoonful vinegar,<br />
a little cinnamon and butter. Boil until it thickens.<br />
Bake with a double crust.<br />

Chocolate Pie<br />
One pint milk and square of chocolate, heated,<br />
add % cupful sugar, yolks of 2 eggs, 1 teaspoonful<br />
vanilla thickened with 1 large tablespoonful corn<br />
starch. Have the crust baked and fill with the above<br />
filling.<br />
