CherrY tOMAtO, GOAt’S CheeSe And FreSh bASIl PIzzA<br />

Makes 6 slices<br />

2 garlic cloves, minced<br />

2 cups (500 ml) mozzarella cheese, grated<br />

1½ cups (375 ml) small cherry tomatoes, cut in half<br />

salt and pepper<br />

¼ lb (125 g) goat’s cheese, crumbled<br />

⅓ cup (75 ml) fresh basil, chopped<br />

Prepare and grill both sides of pizza dough rectangles as described. using the<br />

back of a spoon, spread garlic over the dough. Sprinkle evenly with mozzarella.<br />

top with cherry tomatoes and season with salt and pepper. Sprinkle with goat’s<br />

cheese. Grill until cheeses melt (about 3 minutes). rotate pizza frequently,<br />

checking to see that the undersides are not charring. transfer to a cutting board<br />

and sprinkle with basil. Cut into 6 pieces and serve.<br />

Makes 6 slices<br />

grilled Vegetables<br />

2 tbsp (30 ml) lemon or lime juice<br />

2 tsp (10 ml) dijon mustard<br />

¼ cup (50 ml) extra-virgin olive oil<br />

6 asparagus stalks, trimmed<br />

1 zucchini, cut horizontally into thirds<br />

1 red onion, cut into 1-inch (2.5 cm) wedges<br />

1 red bell pepper, cut into 2-inch (5 cm) wide strips<br />

Salt and freshly ground pepper to taste<br />

Start with a well-seasoned grill. rub vegetable oil on the gas grill or spray with nonstick<br />

grill spray before lighting. turn all burners to high and close lid for 10 minutes.<br />

Adjust burners to medium heat. whisk together juice and mustard in a small bowl.<br />

Gradually whisk in oil. Place vegetables in a baking dish. Pour oil over top and toss<br />

to coat. let stand for 15 minutes. remove from dish and place vegetables directly<br />

on grill. Grill over moderately high heat until lightly charred and tender, turning<br />

frequently and basting occasionally with the reserved marinade.<br />

To prepare pizza:<br />

1 cup (250 ml) Fontina cheese, shredded<br />

¼ cup (50 ml) Parmesan, freshly grated<br />

freshly ground pepper to taste<br />

grilled vegetables on pizza crust. Sprinkle with Fontina and Parmesan. Season<br />

generously with pepper. Grill until cheeses melt (about 3 minutes). rotate pizza<br />

frequently, checking to see that the undersides are not charring. transfer to a<br />

cutting board. Cut into 6 pieces and serve.<br />
