It’s impossible to discuss the<br />
Quaglia’s Provence restaurants<br />
without talking about family.<br />
Owner/chefs Jean-Francis and<br />
Alessandra Quaglia have two<br />
children and two restaurants,<br />
the first of the latter being<br />
Provence Mediterranean Grill in<br />
Point Grey and the second the<br />
subject of this feature, the lively<br />
and fresh Provence Marinaside<br />
in Yaletown.<br />
The couple met in France while<br />
Jean-Francis was working as<br />
Chef de Partie Tournant at the<br />
Hôtel Negresco in Nice under the tutelage<br />
of Dominique LeStanc. At that time,<br />
Alessandra Mossa was a young Canadian<br />
chef, working her way around the Côte<br />
d’Azur, who serendipitously ended up as<br />
Commis de Cuisine at the same Hôtel<br />
Negresco. Despite their diverse countries<br />
of birth, the pair had much in common,<br />
including a long family history of awardwinning<br />
and extraordinary cooks.<br />
Alessandra’s maternal grandmother is<br />
a Master smørrebrød (Danish openface<br />
sandwich) maker and Jean-Francis’<br />
mother is acclaimed chef Suzanne<br />
