Hospitality and Food Service Management<br />
Certificate Program<br />
Are you interested in the field of hospitality and food service management? Are you<br />
an entrepreneur with dreams of opening a bed and breakfast, café, coffee shop or deli?<br />
Would you enjoy developing a career behind the scenes of a foodservice or lodging<br />
establishment? Perhaps you are already working in the food service industry and wish<br />
to enhance your skills and move up in management. This certificate program could<br />
be the right choice to enhance your future in the food service and hospitality field.<br />
Individuals successfully completing all four training programs will receive<br />
a Certificate in Hospitality and Food Service Management from GCC.<br />
The required courses are:<br />

2. Budgeting and Cost Control<br />
3. Supervision in the Hospitality Industry<br />
4. ServSafe© Food Safety Manager Training — (see page 19)<br />

Introduction to Hospitality<br />
Management<br />
The hospitality industry is one of the<br />
modern world’s fastest growing industries.<br />
The first segment of this course provides<br />
an analysis of the various opportunities<br />
within the hospitality field. Topics will<br />
focus on skills required to succeed in a<br />
variety of food service and hospitality<br />
operations. The course concludes with<br />
a focus on supervision and management,<br />
as well as travel and tourism aspects of<br />

Budgeting and Cost Control<br />
This course is designed to provide a<br />
comprehensive and realistic insight into<br />
this crucial areas of the hospitality industry<br />
including an overview of food, beverage,<br />
labor cost controls and budgeting. The<br />
sequencing will provide student(s) with a<br />
general survey of accounting methods and<br />
practices, followed by specific management<br />
techniques for budgeting, controlling and<br />
reporting food, beverage and labor cost.<br />

Supervision in<br />
the Hospitality Industry<br />
As the hospitality industry continues<br />
to grow, both domestically and<br />
internationally, so too does the need for<br />
qualified and competent managers and<br />
leaders. In this course, emphasis is placed<br />
on the role of the hospitality supervisor,<br />
as this position integrates with the<br />
responsibilities of human resources<br />
management. By studying employment<br />
laws as well as leadership styles, by<br />
applying human resources management<br />
concepts to case studies and through<br />
reflection on your own experiences with<br />
supervision, participants will gain<br />
increased knowledge and workable tools<br />
to succeed in supervising roles. At the<br />
conclusion of the course, individuals<br />
will be prepared to undertake a Human<br />
Resources Supervision Certification<br />
from the National Restaurant Association<br />
Educational Foundation. The exam<br />
is included in the cost and is offered<br />
at the end of this program for certification<br />
by the National Restaurant Association.<br />

Event<br />
Management and Design<br />
Learn to create spectacular special events<br />
with the Event Management and Design<br />
online training program. This program<br />
is split up into two modules: Special Event<br />
Management and Special Event Design<br />
and Decoration. Each module includes<br />
multiple units complete with interactive<br />
presentations. Corporate events, weddings,<br />
parades, festivals and more are covered.<br />
You’ll learn about the practicalities of<br />
planning events and the dazzle of<br />
designing them. From permits to<br />
pyrotechnics, this program will teach<br />
you how to design, plan, implement<br />
and evaluate special events.<br />
Upon registering, you’re given an initial<br />
six months to complete this program.<br />
Should you need more time beyond the<br />
six months, an extension of six months<br />
is available at no additional cost.<br />
