HESC3443 Families in Crisis (FA) An interdisciplinary<br />
perspective on internal and external crises faced by<br />
contemporary families, including substance abuse, natural<br />
disasters and other crisis events. Students will explore the<br />
family processes during such experiences and develop<br />
strategies for stress management, coping, and recovery.<br />

HESC3604 Food Preparation for the Hospitality<br />
Industry (FA, SP) Preparation and service <strong>of</strong> food for<br />
large groups. Recipe standardization, menu planning, cost<br />

Building Systems (FA) Continued study <strong>of</strong> structures,<br />
construction techniques and mechanical systems. Students<br />

interior components in addition to large scale drawings.<br />
Manual and computer applications will be utilized for projects.<br />

(FA) Advanced Apparel Merchandising aspects <strong>of</strong> fashion<br />
through interpretation <strong>of</strong> apparel classification, seasonal<br />
cycles, stock emphasis, assortment strategies, target customers,<br />
and apparel trends and an overview <strong>of</strong> marketing<br />
communication including advertising, personal selling and<br />

HESC4043 History <strong>of</strong> Apparel (FA) The evolution <strong>of</strong><br />
clothing from ancient times to the twentieth century with<br />
emphasis upon Western civilization. Cultural and economic<br />
factors affecting dress and customs associated with dress<br />

HESC4053 Contemporary Apparel (SP) Fashion as<br />
a social force, the origin, scope, theory, and history <strong>of</strong> the<br />
fashion business, the materials <strong>of</strong> fashion, the fashion producers,<br />
auxiliary fashion enterprises, designers, fashion leaders,<br />
and leading market. Lecture three hours per week.<br />

HESC4063 Advanced Apparel Production (FA,<br />
SP) An advanced study <strong>of</strong> product development incorporating<br />
technology used in the industry for a career in fashion<br />

HESC4073 Apparel <strong>Studies</strong> Internship (SU) A<br />
practical experience in a retail store or in a work situation<br />
related to the apparel industry to gain insight into the field <strong>of</strong><br />
apparel merchandising and operations. May be repeated for<br />
2 hours. Prerequisite: junior standing and 2.50 cum GPA and<br />
HESC 3033.<br />
HESC4103 Experimental Foods (SP) Application <strong>of</strong><br />
experimental methods for investigations in cookery. Group<br />

HESC4223 Nutrition During the Life Cycle (FA)<br />
Study <strong>of</strong> normal nutrition emphasizing quantitative needs for<br />
nutrients as functions <strong>of</strong> biologic processes that vary during<br />
stages <strong>of</strong> the life cycle. Nutritive needs during pregnancy and<br />
childhood are emphasized with some attention to nourishing<br />
aging and elderly adults. Factors that affect food choices and<br />
eating behavior are also considered. Lecture 3 hours per<br />
week. Prerequisite: HESC 1213 and either (ZOOL 2213 and<br />
ZOOL 2211L or ANSC 3032 or POSC 3032 and ANSC 3042<br />

development beginning with the transition adulthood<br />
through middle age; aproximate age ranges are 18-60 years.<br />
Content focuses on physical, cognitive, psychological, and<br />
social changes that occur throughout this period <strong>of</strong> the life<br />
span. The impact <strong>of</strong> love, work, and family on men’s and<br />
women’s movement through the transitions that comprise<br />
adulthood are emphasized. Prerequisite: HESC 1403 or<br />
PSYC 2003 and junior standing.<br />
HESC4433 Dynamic Family Interaction (SP)<br />
Examination <strong>of</strong> family interaction across the lifespan.<br />
Methods for enhancing marriage and family relations will be<br />
examined. Sources <strong>of</strong> marital conflict, intergenerational support<br />
and negotiations process will be analyzed. Lecture three<br />
hours per week. Prerequisite: HESC 2413 and junior standing.<br />
HESC4443 Gerontology (SP) Physiological and psychological<br />
development <strong>of</strong> the aging individual, extended<br />
family relations, service networks for the elderly, and retirement<br />
activities. Some attention to housing and care needs <strong>of</strong><br />
persons in advanced years. Lecture 3 hours per week.<br />
Seminar. Prerequisite: HESC 1403 (or HESC 2413 or PSYC<br />

HESC4453 Parenting and Family Dynamics (FA,<br />
SP) Focus is on influence <strong>of</strong> parenting and family dynamics<br />
on individual development, especially factors in family life<br />
which contribute to normal psychological development. Topics<br />
include family values, the psychology <strong>of</strong> sex and pregnancy,<br />
the transition to parenthood, childbearing techniques, family<br />
influences on cognitive and social development, and changes<br />
in family relationships during the life cycle. Prerequisite:<br />
HESC 1403 or PSYC 2003.<br />
HESC4463 Administration and Evaluation <strong>of</strong><br />
Child Development Programs (SP) Information on<br />
planning, developing, operating, and evaluating child development<br />
programs. Topics include physical facilities, staff, curriculum,<br />
budgets, parent involvement, and education. Lecture<br />

Interaction with parents and planning, implementing, and<br />
evaluating directed experiences with children ages 3-5 in an<br />

Laboratory (SP) Actual experience facilitating children’s<br />
learning with classroom activities. Participation in planning,<br />
implementing, and evaluating individual children and program.<br />

HESC4483 Internship in Human Development<br />
and Family <strong>Studies</strong> (FA, SP, SU) The internship experience<br />
provides practical experience for students in settings<br />
that are designed to serve the needs <strong>of</strong> individuals and/or<br />
families across the life span. Students must work a minimum<br />
<strong>of</strong> 60 hours per credit hour in the setting. Must be taken no<br />
sooner than the summer following completion <strong>of</strong> junior year.<br />
May be taken for an additional 3 hours <strong>of</strong> elective credit if<br />
second experience is distinctly different from first internship.<br />

HESC4493 Public Policy Advocacy for Children<br />
and Families (FA) Public policy advocacy as related to<br />
children and family issues. Strategies for advocacy will be<br />

food purchasing to available equipment. Receiving, storage,<br />
distribution, and inventory control. Meal quality control and<br />

HESC4623 Selection and Layout <strong>of</strong> Food Service<br />
Equipment (SP) Types <strong>of</strong> food service. Planning food<br />
flow from receiving to service <strong>of</strong> meals. Choosing proper<br />
equipment for the flow plan and service items. Sanitation,<br />
maintenance, comparison <strong>of</strong> personnel requirements. Lecture<br />

HESC4693 Hospitality Management Internship<br />
(FA, SP, SU) Practical experience in a hotel or food service<br />
facility that <strong>of</strong>fers management experience to develop<br />
insight into purchasing, production, planning, tourism and<br />
other customer accommodation concepts within the industry.<br />
