Ein Restaurant für alle Sinne schwebte dem<br />
französischen Küchenchef Paul Pairet vor,<br />
als er im Mai 2012 sein Ultraviolet (uvbypp.<br />
cc) eröffnet hat. Der Besuch ist eine tolle<br />
Inszenierung: Man reserviert via Internet einen<br />
Platz, findet sich zur angegebenen Zeit an dem<br />
verabredeten Ort ein (in der Regel befindet sich<br />
der vor dem Restaurant Mr. & Mrs. Bund, das<br />
ebenfalls von Paul Pairet betrieben wird), wo<br />
man von einem Minibus abgeholt und zum –<br />
nicht gekennzeichneten – Restaurant gebracht<br />
wird. Dort sitzen die zehn Gäste dann an einem<br />
großen Tisch in einem leeren, fensterlosen<br />
Raum, auf dessen Wänden Filme und Bilder<br />
projiziert werden und der mit einem wilden<br />
Musikmix beschallt wird. Die Speisen? Eine<br />
abenteuerliche Mischung aus Molekularküche,<br />
klassischer französischer Küche und allerlei<br />
verrückten Spielereien. Billig ist das nicht. Gut<br />
500 Euro kostet das 20-gängige Degustations-<br />
Menü. Ist das mehr Show als Substanz? Nein,<br />
ist es nicht. „C’est magnifique“, soll gar Alain<br />
Ducasse, der große französische Küchenchef,<br />
ausgerufen haben, als er das Restaurant<br />
besuchte. Wem das zu abgefahren ist: Die<br />
vielen Garküchen, zum Beispiel am Nachtmarkt<br />
an der Shouning Lu, bilden ein erlebenswertes<br />
Kontrastprogramm. Xiaolongbao, die<br />
dünnhäutigen, mit Schweinefleisch und<br />
heißer Suppe gefüllten Teigtaschen, sollte<br />
man unbedingt probiert haben. Vorsicht beim<br />
Reinbeißen: die Suppe kann ganz schön heiß<br />
sein.<br />

TO THE WORLD’S WACKIEST<br />
RESTAURANT.<br />
‘A restaurant for all the senses’ is what French<br />
chef Paul Pairet had in mind when he first<br />
opened Ultraviolet (uvbypp.cc) in May 2012.<br />
A visit here is a spectacular production:<br />
you reserve a seat over the internet, go to<br />
an agreed place at an allotted time (this<br />
is usually in front of the restaurant Mr. &<br />
Mrs. Bund, also run by Paul Pairet), where<br />
you’re collected by minibus and taken to the<br />
– unmarked – restaurant. Once inside, the<br />
ten guests sit at a large table in an empty,<br />
windowless room, onto whose walls films<br />
and pictures are projected, and which is<br />
filled with a wild mix of music. The dishes?<br />
An adventurous mix of molecular cuisine,<br />
classic French cuisine and any number of<br />
crazy gimmicks. It’s not cheap. The 20-course<br />
degustation menu costs a cool 500 euros. Is<br />
it more show than substance? No, it’s not.<br />
“C’est magnifique!” is what Alain Ducasse,<br />
the great French chef, is said to have cried<br />
out when he visited the restaurant. If all<br />
that’s slightly too wacky for you, then the<br />
city’s many cookshops – those at the night<br />
market on Shouning Lu are particularly good<br />
– are an alternative programme well worth<br />
experiencing. Be sure to try the xiaolongbao,<br />
the thin-skinned dumplings filled with pork<br />
and hot soup. Careful when biting in, though:<br />
that soup can be seriously hot.<br />
