INGREDIENTS
250g chicken breast meat, diced
2 sweet potatoes, peeled and cut into chunks
1 small butternut squash, peeled, deseeded and
cut into chunks
2 red peppers, deseeded and cut into chunks
1 onion, peeled and chopped
6 cloves garlic, crushed
25g root ginger, peeled and finely chopped
½ tsp chilli powder
1 heaped tbsp ground coriander
1 heaped tsp ground cumin
1 tsp paprika
2 tsp curry powder
1 tsp garam masala spice
1tsp turmeric
700mls boiling water
3 heaped tbsp. tomato puree
1 bag spinach leaves
100g yogurt
Handful chopped coriander
1tsp sugar
METHOD
1. Preheat oven to 200°c / Gas 7
