MOZZARELLA AND<br />

CHILLI PASTA BAKE<br />

SERVES 4<br />

Ready in 35 minutes<br />

This glorious cheesy pasta<br />

bake is the perfect dish to whip<br />

up for a the whole family – or<br />

for batch cooking and saving<br />

for later. The filling pasta with<br />

a fiery chilli kick will keep you<br />

satisfied for hours and is<br />

perfect before a long walk.<br />

You don’t have to do your miles in amazing places – but<br />

the challenge has a funny way of leading you to them.<br />

l 400g dried pasta shapes,<br />

such as penne or fusilli<br />

l Low-calorie cooking spray<br />

l 1 large onion, finely chopped<br />

l 3 garlic cloves, finely chopped<br />

l 1 tsp dried chilli flakes<br />

l 700g jar passata with onions<br />

and garlic<br />

l 200g frozen peas<br />

l 130g reduced-fat mozzarella<br />

l Small handful of torn fresh<br />

basil leaves, to garnish<br />

l Salad, to serve<br />

METHOD:<br />

Preheat your oven to 180°C/Fan<br />

160°C/Gas 4. Cook the pasta<br />

according to the packet<br />

instructions then drain well.<br />

Meanwhile, spray a large nonstick<br />

frying pan with low-calorie<br />

cooking spray and place over<br />

a medium heat. Add the onion,<br />

garlic and chilli and stir-fry for<br />

3-4 minutes or until softened.<br />

Add the passata, season to taste<br />

and stir. Simmer gently for 2-3<br />

minutes, stirring occasionally,<br />

then stir in the peas and remove<br />

from the heat. Tip the pasta into<br />

a medium-sized baking dish.<br />

Pour in the tomato sauce and<br />

toss well to coat the pasta.<br />

Scatter over the mozzarella and<br />

bake for 12-15 minutes. Grind<br />

over a little black pepper,<br />

scatter over the basil leaves and<br />

serve hot or cold with salad.<br />
