Minus 8 is a family owned vineyard in Niagara, Canada. Minus 8 is also the name
of their first ice wine vinegar named after the temperature at which the grapes were
harvested and pressed. The vinegar maker is also their wine maker – he thought to
make vinegar from a batch for fun – and Chefs loved it and wanted to buy it. Today,
there are now 12 varieties of vinegars and verjus.
