La Chocolaterie de l’Opera is a family-owned chocolate maker started by Olivier de

Loisy in 1995 and managed by his son Nicolas, 4th generation of chocolate makers.

They specialize in creating unique couverture for professionals by sourcing only rare

cocoa beans from small plantations. They were the first company to propose and

market a single-origin couverture in 1995. In 2017 they launched a new revolutionary

roasting process Sequencia. Their mission: unveil cocoa bean’s full aromatic potential.
