In various regions of El Salvador, small farmers<br />
grow native species of corn, known as "criollo"<br />
maize, such as black, purple, red or "tizate".<br />
These criollo maize have greater resistance to<br />
water stress and vary in size, color, resistance<br />
and period of planting and harvesting. Due to<br />
their small-scale planting they have not a high<br />
consumption.<br />
On a large scale three varieties of white corn are<br />
sown due to their high yield to cover the needs of<br />
national consumption. Annually, corn cultivation<br />
covers an area of 264 thousand hectares in the<br />
