Comense nonché sommelier<br />
professionista, è l'autore dell'invitante<br />
ricetta – proposta per<br />
la rubrica dedicata al gusto – a<br />
base di pesce persico, un prodotto<br />
ittico tipico del lago che<br />
i cultori della cucina locale ben<br />
conoscono.<br />
Dopo un triennio di gastronomia<br />
al "Capac di Milano", Sergio<br />
Mauri (nella foto) si è dedicato a<br />
"esperienze di cucina" – <strong>com</strong>e<br />
lui le chiama – in locali della<br />
provincia di Como, fino a raggiungere<br />
la qualifica di chef<br />
responsabile. Maturata l'idea di<br />
mettersi in proprio, nel 1988 si<br />
specializza in due tra i migliori<br />
ristoranti dell’Alsazia e del Lionese<br />
e, nel 1989, apre a Mariano<br />
Comense il ristorante "La Rimessa",<br />
utilizzando i locali ristrutturati<br />
di una vecchia rimessa di carrozze<br />
all’interno dell’ottocentesca Villa<br />
Besana.<br />
Animato da grande passione e professionalità,<br />
nel corso degli anni, ha<br />
portato il ristorante a conquistare<br />
consensi sempre maggiori da<br />
parte del pubblico e della critica<br />
gastronomica ottenendo ottimi<br />
punteggi su tutte le guide<br />
nazionali. Nel 1997, infatti, “La<br />
Rimessa” entra a far parte della<br />
Chaîne des Rôtisseurs, nel 1999<br />
dell’Unione Ristoranti del Buon<br />
Ricordo e nel gennaio 2000<br />
dell’Associazione Euro-Toques<br />
Italia. Insignito del Cocorum nel<br />
2006, Sergio Mauri fa parte del<br />
consiglio direttivo dell’Associazione<br />
Cuochi della delegazione<br />
di Como.<br />
La cucina che ha particolarmente<br />
approfondito nel corso degli<br />
anni anni e della quale si può<br />
fare esperienza al suo ristorante<br />
è quella mediterranea e del<br />
territorio, con particolare attenzione<br />
ai condimenti, ai prodotti<br />
di stagione e alla ricerca accurata<br />
delle materie prime, nel rigoroso<br />
rispetto dei sapori primari.<br />
FOOD<br />
"Cooking experiences" between<br />
the Mediterranean and the Lario<br />
Sergio Mauri (1950 class), proprietor-chef<br />
of the restaurant ‘La Rimessa’<br />
in Mariano Comense as well<br />
as professional sommelier, is the<br />
author of the inviting recipe (part of<br />
the series devoted to taste) based on<br />
perch, a typical lake fish, very familiar<br />
to lovers of local cookery.<br />
After 3 years’ gastronomy in the Milan<br />
restaurant Capac, Segio Mauri<br />
switched over to ‘cooking experiences’<br />
– as he calls them – in establishments<br />
in the Province of Como,<br />
working up to the position of head<br />
‘chef’.<br />
Feeling ready to be<strong>com</strong>e self-employed,<br />
he specialised in two of the<br />
best restaurants in Alsace and the<br />
Lyon area until 1989 when he opened<br />
the restaurant ‘La Rimessa’<br />
in Mariano Comense, using restored<br />
premises of an old coach shed in the<br />
19th century Villa Besana.<br />
Over the course of the years his passionate<br />
professional approach led to<br />
the restaurant’s ever greater popula-<br />
rity both with the public and food &<br />
drink critics, achieving excellent star<br />
ratings in all the National Guides.<br />
In 1997 in fact ‘La Rimessa’ joined<br />
the Chaîne des Rôtisseurs , in 1999<br />
the Buon Ricordo Restaurant Union,<br />
and in January 2000 the Euro-Toques<br />
Italia Association.<br />
Awarded a Cocorum in 2006, Sergio<br />
Mauri is now on the Executive Board<br />
of the Cooks’ Association of the Delegation<br />
of Como.<br />
The cuisine he has specialised in over<br />
the years which you can try out at<br />
his restaurant is Mediterranean and<br />

local, highlighting seasoning, seasonal<br />
produce and careful research<br />
into basic ingredients with rigorous<br />
respect for primary flavours.<br />

LA RICETTA<br />
THE RECIPE<br />
Filetti di pesce persico<br />
nostrano al curry<br />
con riso nero Venere<br />
Ingredienti per 4 persone<br />
• 32 filetti di pesce<br />
persico nostrano<br />
• 280 g di riso nero Venere<br />
• 100 g di burro<br />
• 50 g di parmigiano<br />
Per la salsa al curry<br />
• 1 scalogno tritato<br />
• 30 g di curry<br />
• ½ bicchiere di vino bianco<br />
il succo di mezzo limone<br />
• 100 g di panna fresca<br />
prezzemolo tritato q.b.<br />
• sale q.b.<br />
• un cucchiaio di olio extravergine<br />
d'oliva<br />
Per la salsa<br />
Imbiondire lo scalogno tritato<br />
con un cucchiaio d’olio in una<br />
padella, sfumare con il vino<br />
bianco e il limone, lasciare evaporare,<br />
poi aggiungere il curry e<br />
la panna, aggiustare di sale e far<br />
sobbollire per 5 minuti.<br />
Passare al colino fine e solo alla<br />
fine aggiungere il prezzemolo.<br />
Preparazione<br />
Sbollentare per 10 minuti il riso,<br />
scolarlo e portarlo a cottura per<br />
altri 15 minuti mantecandolo<br />
con burro e parmigiano.<br />
Far rosolare in<br />
padella i filetti<br />
di pesce persico<br />
con il burro.<br />
Disporre il<br />
riso al centro<br />
del piatto,<br />
porvi sopra i<br />
filetti di pesce<br />
persico e nappare<br />
alla fine con<br />
la salsa al curry.<br />
Il vino<br />
In abbinamento proponiamo<br />
un vino bianco:<br />
il “Solesta”, prodotto dall’azienda<br />
agricola “La Costa”<br />
di Perego (Lecco)<br />
Curried local<br />
perch fillets<br />
with black<br />
Venus rice<br />
Ingredients<br />
for 4 people<br />
• 32 local perch<br />
fillets<br />
• 280 g of black<br />
Venus rice<br />
• 100 g of butter<br />
• 50 g of parmesan<br />
cheese<br />
For the curry sauce<br />
• 1 sliced shallot<br />
• 30 g of curry<br />
• 1/2 glass white wine<br />
• juice of 1/2 lemon<br />
• 100g of fresh cream<br />
• sliced parsley a.r.<br />
• salt a.r.<br />
• olive oil a.r<br />
For the sauce<br />
Brown the sliced shallot with<br />
oil in a frying-pan; gently drip<br />
in the white wine and lemon, allowing<br />
liquid mixture to evaporate;<br />
add in the curry and cream<br />
with salt a.r. and simmer fo 5<br />
minutes; strain and finally<br />
add in the parsely.<br />
What to do<br />
Parboil the rice for 10 minutes,<br />
strain it and then go on cooking<br />
it for another 15 minutes as you<br />
stir in the butter and parmesan<br />
cheese.<br />
Brown the perch fillets in butter<br />
in a frying-pan.<br />
Pile the rice up in the middle of<br />
a plate, place the perch fillets on<br />
top, and finally cover everything<br />
with the curry sauce.<br />
