ABSTRACT<br />
Bovine cysticercosis is a widespread disease within Brazil, detected in<br />
meatpackers by way of Federal Inspection during post mortem inspection in the<br />
slaughterhouse. The ingestion of the Cysticercus bovis when present in beef<br />
causes humans to develop Taenia saginata which can lead to gastrointestinal<br />
disturbances and the loss of weight. The procedural treatment of the carcasses<br />
with light infestation of live cysts proposed by legislation in the form of freezing for<br />
15 days or wet salting for 21 days has generated great losses to the food industry.<br />
The objective of this study was to simulate the presence of Cysticercus bovis in<br />
the musculature to verify its viability or not after the production of jerked meat in a<br />
reduced time period. The result obtained was that 100% of the cysts tested<br />
became unviable after the production of jerked meat in the period of 7 days.
