ABSTRACT
Bovine cysticercosis is a widespread disease within Brazil, detected in
meatpackers by way of Federal Inspection during post mortem inspection in the
slaughterhouse. The ingestion of the Cysticercus bovis when present in beef
causes humans to develop Taenia saginata which can lead to gastrointestinal
disturbances and the loss of weight. The procedural treatment of the carcasses
with light infestation of live cysts proposed by legislation in the form of freezing for
15 days or wet salting for 21 days has generated great losses to the food industry.
The objective of this study was to simulate the presence of Cysticercus bovis in
the musculature to verify its viability or not after the production of jerked meat in a
reduced time period. The result obtained was that 100% of the cysts tested
became unviable after the production of jerked meat in the period of 7 days.
