<strong>Biotecnologia</strong> aplicada ao valor Pesquisa nutricional dos alimentos Biofortificação Neuza Maria Brunoro Costa PhD em Nutrição Humana, professora do Departamento de Nutrição e Saúde, Universidade Federal de Viçosa, Viçosa, MG nmbc@ufv.br Fotos cedid<strong>as</strong> pela autora biotecnologia b<strong>as</strong>eia-se na habilidade de introduzir, <strong>com</strong> precisão, construções gênic<strong>as</strong> em um organismo, usando a tecnologia do DNA re<strong>com</strong>binante ou técnic<strong>as</strong> de engenharia genética para alterar os seus processos metabólicos favoravelmente. A maioria d<strong>as</strong> pesquis<strong>as</strong> de melhoramento de plant<strong>as</strong> d<strong>as</strong> du<strong>as</strong> últim<strong>as</strong> décad<strong>as</strong> tem sido direcionada para aumentar a produtividade e resistência a doenç<strong>as</strong> e prag<strong>as</strong>. Atualmente, a aplicação de biotecnologia às plant<strong>as</strong> tem sido direcionada para aumentar sua qualidade nutricional (Zimmermann e Hurrel, 2002). Segundo Kishore e Shewmaker (1999), o desenvolvimento da biotecnologia pode ser dividido em três f<strong>as</strong>es. A primeira f<strong>as</strong>e consistiu na introdução de característic<strong>as</strong> agronômic<strong>as</strong>. Desde 1995, alguns produtos <strong>com</strong> melhores <strong>as</strong>pectos culturais têm sido lançados no mercado, <strong>com</strong> a soja Roundup Ready, tolerante ao glifosato, um ingrediente ativo do herbicida Roundup. Outro exemplo de produto <strong>com</strong> melhores <strong>as</strong>pectos culturais é o milho YieldGard. Este milho possui um gene que codifica para uma proteína inseticida que ocorre naturalmente na bactéria Bacillus thuringiensis e confere resistência à broca no milho, inseto que infesta a cultura e reduz sua produção de 6% a 20%. A segunda f<strong>as</strong>e da biotecnologia visa à produção de cultur<strong>as</strong> de melhor qualidade. O melhoramento genético clássico tem produzido alimentos diferenciados, <strong>com</strong>o a canola <strong>com</strong> alto teor de ácido erúcico e glicosinolato, milho ceroso <strong>com</strong> alto teor de amilose, arroz <strong>com</strong> grão longo e trigo durrun. Vários produtos para ração animal estão sendo desenvolvidos, entre os quais aqueles <strong>com</strong> grãos <strong>com</strong> alta densidade calórica, devido ao elevado conteúdo de óleo; e os de grãos <strong>com</strong> alta densidade de nutrientes, principalmente teor de proteína, aminoácidos essenciais ou micronutrientes. O milho <strong>com</strong> alto teor de óleo (6% ou mais) e/ou alto teor de proteína é resultado do melhoramento molecular. Outro exemplo da biotecnologia, introduzindo genes que alteram vi<strong>as</strong> metabólic<strong>as</strong>, é a produção de gordura sólida ou semi-sólida sem ácidos graxos trans n<strong>as</strong> sementes oleaginos<strong>as</strong>. Isso é possível, inibindo-se a conversão de ácido esteárico para oléico em soja e canola. A melhoria de atributos <strong>com</strong>o flatulência, flavor do feijão, propriedades de textura e emulsificação da soja também são exemplos de novos produtos da biotecnologia da segunda f<strong>as</strong>e.
