Katsuya’s philosophy, in cooperation with Starck, is to provide<br />

an authentic experience of Japan, which is achieved<br />

by once again using a combination of traditional and<br />

modern elements that lead the contemporary guest closer<br />

to a literary experience of eating in a circle around the<br />

fire. That sort of combination simply craved for the hiring<br />

of an author like Starck, as it was required to work with a<br />

wide spectrum of elements from the fields of contemporary<br />

industrial design and interior design, in which Starck<br />

is established as a second-to-none figure. For example, in<br />

order to achieve a sense of closeness, Starck made a few<br />

decisions regarding the lounge bar, where he positioned<br />

low tables with plenty of cushions while using intimate lighting<br />

that, when combined with the already-mentioned artistic<br />

features on walls and the wooden elements on the<br />

ceiling and the floor, has further effect on the warm and<br />

cosy ambience. In general, the whole guiding idea was<br />

influenced by Eastern minimalism, and while talking about<br />

the experience of working on restaurant Katsuya, Starck<br />

has the tendency to say that he prefers the “monastic”<br />

approach to designing a lounge, and that he actually<br />

“created and equipped a monastery” while working on<br />

Katsuya Hollywood. It could be that the conflict of this<br />

principle with the previously described fetishist impulses of<br />

extreme sensuality is what makes Katsuya attractive and<br />

desirable to this extent.<br />

The basic restaurant information contain the following:<br />

out of the overall capacity of 180 people, 68 of them can<br />

be accommodated in the central room, while the darker<br />

Dragon Lounge, aimed primarily for enjoying cocktails as<br />

well as complete meals, can be filled up with 50 people.<br />

Guests also have two private booths at their disposal, and<br />

both of them can take up to eight people. The abovementioned<br />

entrance bar has enough room for 18 people,<br />

and we can also find the open section with 40 tables oriented<br />

towards Hollywood and Vine Boulevard.<br />

The food that is served in the restaurant is an original sample<br />

of Katsuya’s gastro-portfolio, which has been improving<br />

the offering of Japanese traditional cuisine in Los Angeles<br />

for three decades. Furthermore, the promoters claim<br />

that the very design and ambient “hype” of the restaurant<br />

serve as the “energetic addition” in the idea of Katsuya<br />

Hollywood, due to the fact that the entire basis and reason<br />

for the existence of the entire chain lie in Katsuya’s<br />

culinary skills. That’s why the abovementioned sushi-bar<br />

within the restaurant offers masterpieces of sushi meals,<br />

rolls and sashimi plates. Japanese grill Robata in Katsuya<br />

prepares meals such as steak with asparagus in spicy teriyaki<br />

sauce, as well as the royal (Alaskan) crab with soya<br />

butter and garlic. The cuisine’s main specialties include<br />

spicy tuna with crunchy onion and other meals that are<br />

mostly fish-oriented, and which feature attractive sauces<br />

and side dishes containing soya and miso-algae.<br />

Katsuya Hollywood, as another product of the recently established<br />

cooperation between several brands – cuisine<br />

master Katsuya, SBE management and Starck’s design,<br />

has encouraged the critics of the trend-setting Angeleno<br />

Magazine to come up with the conclusion that the experience<br />

of visiting this just-opened restaurant is “taking part in<br />

something that is very, very important”…<br />
