. Specialty foods Consumers are interested in a new eating experience. Asian foods offer a wide variety of tastes and flavours, types of foods and dining experiences such as Japanese, Korean, Chinese, Indonesian, Vietnamese and Thai. c. Low barriers to entry There are relatively low costs of entry associated with the start-up of restaurants and café’s. Many Asian migrants are able to establish such enterprises and the Asian take-away continues to be a ubiquitous business in most suburbs and towns throughout Australia. 7.4.2 Key comments and issues from industry surveys Consumer market The food service industry has the broadest consumer market. Restaurants and café’s in both western and Asian population areas service all three types of consumers: western, Asian and ‘bridging’ consumers. Product range and category growth As with the Asian retailers, food service groups noted the ability of the many small and medium sized local manufacturers to supply processed Asian foods such as fresh noodles, and meats such as roast meats and processed fish balls. These products are in constant demand and have led to a growth in sauces, seasonings and other condiments such as Asian specialty mushrooms. New foods and flavours Restaurants and café’s are often the frontier for new food products and flavours. Many believe that they are the ‘pioneers’ of the use of authentic Asian flavours in Asian foods. In turn they believe that the western palate is educated through the restaurant or café dining experience and consumers subsequently seek out these products on the shelves of Asian retail stores or retail supermarkets. Anecdotally, the introduction of sauces such as oyster, hoisin and the more recent XO flavour are demonstrable examples. Fresh foods and condiments Restaurants emphasised the importance of the freshness of foods. Asian vegetables and seafood were particularly referenced in this regard, however the importance of the authentic Asian sauces and condiments to the recipes was also noted. Condiments were considered key to the pleasurable fresh eating experience for consumers. Australian manufactured processed Asian foods Retailers noted the ability of the many small and medium sized local manufacturers to supply processed Asian foods such as fresh noodles, drinks, soy food products and many other fresh or semi-perishable traditional Asian foods. Freshness of product was cited again as a key point of difference or a competitive advantage for local manufacturers. As with Asian retailers, restaurants and café’s source much of their products from traditional Asian imports, but noted that there was an increasing availability of the locally manufactured fresh foods. 74
7.5 Manufacturers of processed Asian foods 7.5.1 General The industry survey identified at least 40 major manufacturers of processed Asian foods in Australia. The industry operates at two scales: large multi-national corporations (MNC’s) and small and medium size enterprises (SME’s). It is emphasised that this is not intended to be a comprehensive listing of all manufacturers in Australia as there are a large number of SME’s that supply fresh foods such as noodles, soy foods and fish balls. Such small enterprises are not of sufficient size to distribute beyond their local areas. Anecdotally it is reported that the growth of SME’s has been rapid during the last 10 years.
