Drawing on the historic tradition of Philipponnat in the region of Ay and Mareuil-sur-Ay,<br />

Royale Réserve takes advantage of the rich and powerful Pinot Noir grapes from the southern<br />

side of the Montagne de Reims, which always makes up the majority of the blend.<br />

With three years' ageing, Royale Réserve is quite sufficiently mature, yet remains crisp and<br />

therefore is a perfect aperitif. Its vinosity also makes excellent matches with white meat, cold<br />

cuts, poultry and fish.<br />

Blend: Chardonnay (100%) Luminous pale gold colour, with fine, light bubbles that rise in a<br />

delicate, long-lasting line. On the nose there is fresh fruit (mostly citrus) combined with<br />

aromas of white flowers & white fruits (peach). This is a very attractive Blanc de Blancs, pure<br />

distinct & clear-cut. Evolves in the mouth, fluctuating between freshness, suppleness &<br />

fulness. Delightful with seafood, grilled sole or sashimi with white fish.<br />

The R de Ruinart range is made up of a skillful blend of wines made from the Chardonnay and<br />

Pinot Noir grapes. "R" de Ruinart is a golden, lively, fruity champagne with the subtle aroma<br />

of white fruits which make it an excellent aperitif or the ideal accompaniment for a meal at<br />

which champagne is the only wine served. Perfectly balanced, fresh. Extremely long finish. The<br />

full extent of its aromas will be brought out by a subtle, sophisticated dish such as lightly<br />

sautéed scallops or sole meurniere.<br />

The dominance of Pinot Noir gives this wine the strong structure typical of the 'House<br />

Champagne', while a slight touch of Pinot Meunier adds roundness. Chardonnay gives it the<br />

elegance and finesse it needs for perfect balance. The use of reserve wines which have been<br />

stocked year by year is one of the secrets of the 'Carte Jaune' production and it is well<br />

appreciated by wine connoisseurs. Excellent as an aperitif because of its finesse, freshness<br />

and length. Full-bodied, it goes well with freshwater fish and delicate sea fish.<br />

This Demi-Sec is blended largely from Pinot Noir with Chardonnay and Pinot Meunier as well as<br />

reserve wines. The liqueur d'expédition carefully prepared and dosed with 45 g per litre, gives<br />

it a sweeter yet still very fresh harmony. It is at its best when served with desserts. You could<br />

even serve it in a carafe, not to decant it but to admire the colour and the delicate bubbles of<br />

this elegant wine.<br />

This is a complex, fresh, yet powerful blend in which the Pinot Noir stands out. At 60% of the<br />

blend it not only colour, but also strength and personality. Pinot Meunier (18%) contributes all<br />

its liveliness and fruitiness, whilst the finesse and elegance of the Chardonnay (22%) gives this<br />

its final balance. The nose has rich, intense aromas in which red fruit characteristics stand out<br />

- the slight presence of caramel and vanilla are a reminder of the Cordon Rouge influence. On<br />

the palate the attack is lively and perfectly balanced, reflecting the strong personality of the<br />

Pinot Noir; flavours of strawberry, redcurrants and toast come to the fore, whilst the finish is<br />

dry and refreshing.Try with salmon and brown bread for a bit of a cliché, though Eton Mess<br />

and boudoir biscuits would be a kinky combination also...?<br />

Didier Gallimard owns 10 hectares of prime vineyard on the steep slopes around Les Riceys in<br />

the Southern Aube. His vines average 20 year’s old and the vineyards which are of chalk and<br />

limestone are planted to 100% Pinot Noir. His wines are full, rich and offer enticing aromas and<br />

flavours of exotic summer fruits.<br />

An immensely successful Champagne - big and vinous. Made from 100% Pinot Noir grapes from<br />

this champagne gets its glorious pink colour and rounded red fruit flavours from a process<br />

known as 'saignee' in which the skins of the grapes are left in contact with the juice for three<br />

days. Laurent-Perrier`s Cuvee Rose not only makes a delicious aperitif but is also a good match<br />

for a variety of different dishes, particularly puddings.<br />

This champagne has a superb raspberry colour with orange and copper highlights and the<br />

bubbles are fine and lively. Essentially a fruity style with aromas of gooseberries, raspberries,<br />

red apples, cherries and wild strawberries. Some mineral/chalky notes mingle with subtle<br />

hints of brioche. A lively, fresh attack.<br />

Lively and generous, Rosé Impérial distinguishes itself by a radiant colour, an intense fruitiness<br />

and flamboyance on the palate, that instantly seduce and delight. Rosé Impérial's assemblage<br />

is built on the intensity of Pinot Noir (40 to 50%, 10% of which are red wine), the fruitiness of<br />

Pinot Meunier (30 to 40%, 10% of which are red wine) and the finesse of Chardonnay (10 to<br />

20%). The aromas are intense and irresistible, a lively bouquet of fresh red summer berries<br />

(strawberry, raspberry and red currant) with floral nuances (rose, hawthorn) and a light<br />

grapes from the beautiful vineyards of Montagne de Reims in Ay and Mareuil-sur-Ay and its<br />

three year ageing process gives it a pleasant complexity without taking anything away from<br />

its freshness.<br />

This fine rosé is dry yet fruity with hints of strawberries, red currants, and candied mandarin.<br />

It makes a lovely accompaniment for smoked meats and fish, pork butchery, as well as<br />

desserts made with red berries, or simply on its own.<br />

and freshly picked berries. On the palate it is well balanced, fruity and fresh. This champagne<br />

owes its elegance and delicacy to its high percentage of Chardonnay (45%). A majority of<br />

Champagne G.H. Mumm, now owned by Pernod Ricard, has launched its new prestige cuvee:<br />

Cuvée R. Lalou. The brand is currently undergoing a dramatic reinvention and the launch of<br />

this fine wine marks a coming out of sorts. The new terroir-focused bubbly takes its name<br />

from Rene Lalou, chairman of Mumm from 1939 to 1973. The rich, full-bodied wine is made of<br />

half pinot noir, half chardonnay grapes. It is produced in very small quantities and only with<br />

grapes sourced in the best years from up to twelve of the very best grand cru parcels within<br />

the Mumm vineyard. Only seven of these parcels were chosen for the 1998 vintage. It is<br />

available in only limited quantities and has not been bottled in magnums. So, by all means,<br />

put on your finest frock and bottoms up!<br />
