This is authentic Madeira. A regular Gold Medal winner, and one which we would suggest<br />

serving between larder and room temperature, rather than fully chilling. Tom Cannavan<br />

Tasting Notes "Deep burnished gold, hinting at tawny. Oxidised notes of bruised fruit and a<br />

nutty character. Delicate yeasty notes. On the palate quite richly textured, with a sweetness<br />

at first, but soon overtaken by dry, Fino-like nuttiness and plenty of lemon rind waxiness and<br />

crisp, clean, white fruit and citrus acidity. This has a multi-layered complexity, and the 50g/l of<br />

residual sugar is mind-boggling given the searing dryness of the finish. 90 Points"<br />

This is authentic Madeira. Overall Fortified Wine Trophy at the International Wine Challenge<br />

2009. Tasting: Tom Cannavan "Rich burnished gold. A little rotted orange note of oxidation of<br />

this ripe fruit, with a hint of barley sugar and little floral and exotic fruit notes, as well as a<br />

delicate spiciness. On the palate the immediate impression is dry, with a lushness to the<br />

texture and a building sweetness through the mid-palate. There is a welterweight of acidity<br />

here again, but the creamy, toffeed character balances, and this stays quite rich but very well<br />

defined through its acid structure into a long, tangy finish that leaves a real impression in the<br />

mouth."<br />

A text book Amontillado of great maturity, made from 100% Palomino Fino grapes. Naturally<br />

dry and soft, its palate gives a hint of wood and smoky raisins. A powerful and distinctive<br />

nutty bouquet. A better Amontillado would be difficult to find. Serve slightly chilled as a<br />

warming apéritif.<br />

EMILIO LUSTAU Manzanilla 'Papirusa' Bottle<br />

This is a bone dry Manzanilla from the town of Sanlúcar de Barrameda made from 100%<br />

Palomino Fino grapes. It is light and fresh, very tangy, clean and crisp with just a hint of<br />

saltiness. Serve it chilled as an apéritif.<br />

straw color is accompanied by a spicy, nutty nose, elegant, dry flavours, delicious purity, and a<br />

Made from 100% Palomino Fino grapes this is a truly great wine matured in the town of Puerto<br />

de Santa María, considered by many experts to be the home of the finest classic fino. Dry,<br />

elegant, light and smooth with just a hint of the sea and attractive fruit. Very fresh, with a<br />

slight taste of tangy yeast. The pronounced flor bouquet is due to Puerto Fino's double<br />

maturation under fresh flor. Serve chilled as an apéritif or as a wine with food. Delicious with<br />

shellfish and other seafood.<br />

EMILIO HIDALGO Pedro Ximenez N.V. Bottle<br />

The bodega was founded in the mid nineteenth century by Emilio Hidalgo. The company is<br />

owned and operated by the fifth generation of his descendants. The winery has been located,<br />

since its inception, in the old part of the city of Jerez de la Frontera. Ageing: A system of<br />

horizontal soleras is used - instead of the usual vertical or pyramidal system – ensuring the<br />

barrels are as close to the floor as possible and stored in the coolest, most humid parts of the<br />

cellars. Style: The Hidalgo family think of their sherries more as table wines than fortified<br />

wines. The wines are elegant and complex and match a wider variety of foods than many<br />

typical sherries. This wine has a very dark, almost opaque colour; the aroma is of toasted nuts<br />

and raisins, the flavours reminiscent of dates and sweet figs. Long, complex and pure, it is<br />

relatively delicate compared to many PX’s which just taste of molasses. Fantastic match for<br />

bitter chocolate puddings, ice cream or strong blue cheeses.<br />

Made from 100% Palomino Fino grapes this sherry has a light amber, gold colour and is dry and<br />

has an immensely rich flavour, with nuances of vanilla, coffee and dark chocolate. Serve it at<br />

cool room temperature as an aperitif with nuts.<br />

THE ALMACENISTA: Vides S.A. was founded in 1958 by Don Tomas Domecq Rivero, and the<br />

bodegas are located a few hundred yards from Lustau's main cellars in the old Santiago<br />

quarter of the city. Today, his grandson, Don Fernando Leon Manjon owns the bodega.<br />

ROBERT PARKER 93 points (2007) 'The non-vintage Palo Cortado, Almacenista Vides is dark<br />

amber, slightly sweeter and richer than the Amontillado and would be excellent with quail,<br />

partridge, and grouse.'<br />

Almost black in colour. A pronounced and delicious bouquet of the essence of sweet raisins.<br />

The taste is very sweet, smooth, pronounced and delicous just like dried raisins or sweet<br />

grape juice. This is a very sweet dessert wine made from 100% Pedro Ximénez grapes and it<br />

should be consumed, chilled, on its own or with rich, fruity puddings. Also classically used as<br />

the sauce for one of the famous desserts of Jerez: ice cream with Pedro Ximénez Sherry.<br />

Made from Palomino Fino and Pedro Ximénez grapes in the traditional way and at the original<br />

strength - one of the few examples left of what cream sherry should taste like. Deep amber in<br />

smoothly and seductively. A powerful balance of sweetness, richness and maturity. Serve at<br />

The Curatolo family has been producing excellent Marsala and creditable wine for over a<br />

century. They are the oldest, family-owned Marsala house in Italy. Light wines from local<br />

grapes Grillo, Inzolia, and Cataratto are fortified with white grape spirits in the traditional<br />

way. The wines are then cask aged for 2 years in order to get the Superiore classification. This<br />

Marsala has intense, long-lasting flavours with characteristic wood scents, toasted almonds,<br />

citrus, and perfumes of vanilla, caramel and honey.<br />

Excellent and very underrated apéritif from the Cognac region of France. A blend of fresh<br />

grape juice from Colombard grapes and wonderfully smooth cognac, it has freshness, a hint of<br />

sweetness and a clean finish.<br />

CHATEAU MONTIFAUD Pineau des Charentes Rose/Rouge £13.95<br />

N.V. Bottle<br />

Pineau rosé is made with Cabernet and the Merlot grapes and undergoes a cold pelliculaire<br />

maceration for several days, to extract the best aromas contained in the pulp. This process<br />

obtains a pleasant perfume of red fruits (blackcurrant, morello cherry). Use as an aperitif,<br />

with melon, or at dessert with chocolate cake.<br />
