panel. The length of time to cellar wines is a very subjective<br />

decision and will depend on individual preferences, cellar<br />

This legendary libation was one of a shortlist of<br />

whiskies to have received 95 points, the highest<br />

score ever awarded by whisky guru Michael Jackson<br />

(The Malt Whisky Companion, 2004). It is matured<br />

entirely in Sherry barrels. While the sherry barrels<br />

impart rich, smoky, cinnamon-spice character to<br />

the malt, the distillers use relatively small pot stills<br />

to give this whisky a pleasant dryness. This is an<br />

excellent aperitif whisky to serve with wild-caught<br />

smoked salmon, or as the perfect accompaniment<br />

to contemplation or good conversation.<br />
