with [Rosewood’s] small-batch, artisanal wines<br />

that are made from mostly estate hand-picked<br />

grapes ... The wine portfolio at Rosewood consists<br />

primarily of vinifera varietals (or blends) with a<br />

strong Riesling program and even a rarely made<br />

(at least in Niagara) 100% Semillon ... A nose<br />

of white peach and soft, ripe melon. The peach is<br />

amplified on the palate with nice acidity and a<br />

The 2007 growing season was long, warm and<br />

ideally dry. As a result, relatively neutral but fullbodied<br />

wines, such as Pinot Blanc, benefited.<br />

This version is filled with apple, pear and green<br />

plum aromas. Dry and quite fruity, enjoy this<br />

delicious wine with grilled rainbow trout or grilled<br />

free-range whole chicken.<br />

wine is a good match for pork liver pâté, grilled<br />

tuna or salmon, and game bird.<br />

rosé with ripe berry flavours and aromas – cherry<br />

and raspberry – along with underlying notes of<br />

mineral and graphite. It’s light-medium bodied<br />

with a crisp texture and a refreshing fruit-filled<br />

finish. Scrumptious on its own, pair with pizza or<br />
