At the dinner, a few guests askedme how to be an accomplished sommelier. Myanswer was: “fall in love with the wines”. Therationale behind is simple. It is not easy to getto know a bottle of wine, since its character is asc ompli c ate d as a n indi v idua l pe r sona lit y. We have torecognize the 6 essential elements which determinethe quality of wine, the 3 steps to appreciate wine,the 3 senses to enjoy and describe wine, and theserving temperature for different wines…etc. Onceyou fall in love with it, you will have an unconditionalmotivation to appraise the value of each and everypart of it, and then take all the challenges with it.One of the challenges is to match wine with differentkinds of food.
