Steamed Song Fish Head<br />

as the Asian carp, song yu is<br />
a freshwater fish well-liked<br />
for its large head, meaty flesh<br />
and silky smooth skin. While<br />
some prefer it paired with<br />
the classic ginger mash, why<br />
not go on a different route<br />
with Palms’ special sauce,<br />
a delicious blend of chilli,<br />
ginger, garlic, plum sauce<br />
and soy bean that is copiously<br />
doused over the fish, steamed<br />
and then served with a<br />
generous sprinkle of chopped<br />
coriander. This simple<br />
method of cooking brings<br />
out the freshness of the fish<br />
while retaining its nutrition.<br />
<strong>The</strong> song yu easily takes on<br />
the taste of the sauce, while<br />
the fiery red sauce is spicy and<br />
flavourful with a hint of the<br />
tart-sweet plum sauce to help<br />
keep the appetite going. Here,<br />
you will need more than one<br />
bowl of white rice to mop up<br />
all the delicious juices. Many<br />
argue the highlight is the<br />
fish’s eyes. Understandably an<br />
acquired taste, the pleasure of<br />
digging the jellysoft, chewy<br />
orbs out of their sockets is<br />
perhaps best left to those who<br />
fully appreciate this delicacy.<br />
