Steamed Song Fish Head
with Special Sauce – Known
as the Asian carp, song yu is
a freshwater fish well-liked
for its large head, meaty flesh
and silky smooth skin. While
some prefer it paired with
the classic ginger mash, why
not go on a different route
with Palms’ special sauce,
a delicious blend of chilli,
ginger, garlic, plum sauce
and soy bean that is copiously
doused over the fish, steamed
and then served with a
generous sprinkle of chopped
coriander. This simple
method of cooking brings
out the freshness of the fish
while retaining its nutrition.
The song yu easily takes on
the taste of the sauce, while
the fiery red sauce is spicy and
flavourful with a hint of the
tart-sweet plum sauce to help
keep the appetite going. Here,
you will need more than one
bowl of white rice to mop up
all the delicious juices. Many
argue the highlight is the
fish’s eyes. Understandably an
acquired taste, the pleasure of
digging the jellysoft, chewy
orbs out of their sockets is
perhaps best left to those who
fully appreciate this delicacy.
