PRESSURE COOKER SPICED SWEET<br />

POTATOES AND APPLES<br />

Serves: 4-6 persons<br />

Cook Time: 3 minutes high pressure, quick release<br />

INGREDIENTS<br />

• 1½ c. sliced onions<br />

• 1 tsp. ground cinnamon<br />

• ½ tsp. ground toasted coriander seeds<br />

• ¼ tsp. freshly ground nutmeg<br />

• ¼ tsp. freshly ground black pepper<br />

• pinch of cardamom<br />

• 4 c. diced sweet potatoes (1 ½ lbs or 2 medium)<br />

• 1½ c. diced unpeeled apples, thinly sliced (1 or 2 medium)<br />

• ½ c. vegetable stock<br />

• ¼ c. apple cider or juice<br />

• 2 Tbsp. dark rum (or additional vegetable stock)<br />

• 1 tsp. lemon juice<br />

• 1 tsp. grated lemon zest<br />

• chopped toasted pecans or walnuts (optional)<br />

DIRECTIONS<br />

Heat a stovetop pressure cooker over medium heat or set an electric<br />

cooker to saute. Add the onion and dry saute for 2 minutes. Add all the<br />

spices and sauté for 1 minute longer.<br />

Add the sweet potatoes, apples, stock, cider, and rum. Lock the lid on the<br />

pressure cooker. Bring to high pressure – cook for 3 minutes. Quick release<br />

the pressure. Remove the lid, carefully tilting it away from you.<br />

Add the lemon zest and juice. Transfer to a dish. Garnish with the toasted<br />

nuts and serve.<br />

For the best results, use tart-sweet firm apples such as<br />

Granny Smith, Jonathan or Stayman.<br />
