POTATOES AND APPLES
Submitted by: Arlene Pericak
Serves: 4-6 persons
Cook Time: 3 minutes high pressure, quick release
INGREDIENTS
• 1½ c. sliced onions
• 1 tsp. ground cinnamon
• ½ tsp. ground toasted coriander seeds
• ¼ tsp. freshly ground nutmeg
• ¼ tsp. freshly ground black pepper
• pinch of cardamom
• 4 c. diced sweet potatoes (1 ½ lbs or 2 medium)
• 1½ c. diced unpeeled apples, thinly sliced (1 or 2 medium)
• ½ c. vegetable stock
• ¼ c. apple cider or juice
• 2 Tbsp. dark rum (or additional vegetable stock)
• 1 tsp. lemon juice
• 1 tsp. grated lemon zest
• chopped toasted pecans or walnuts (optional)
DIRECTIONS
Heat a stovetop pressure cooker over medium heat or set an electric
cooker to saute. Add the onion and dry saute for 2 minutes. Add all the
spices and sauté for 1 minute longer.
Add the sweet potatoes, apples, stock, cider, and rum. Lock the lid on the
pressure cooker. Bring to high pressure – cook for 3 minutes. Quick release
the pressure. Remove the lid, carefully tilting it away from you.
Add the lemon zest and juice. Transfer to a dish. Garnish with the toasted
nuts and serve.
For the best results, use tart-sweet firm apples such as
Granny Smith, Jonathan or Stayman.
