HONEY BARBECUE MEATLOAF
Submitted by: Joe Velez
INGREDIENTS
• 1 lb. meatloaf mix (beef, lamb, and veal)
• ½ c. plain panko breadcrumbs
• 1 Tbsp. plus 2 tsp. Worcestershire sauce
• 1 Tbsp. Dijon mustard
• 4 Tbsp. smoky barbecue sauce
• 1 Tbsp. honey
• ½ tsp. salt
• ½ tsp. black pepper
DIRECTIONS
Preheat oven to 350˚. In a large bowl, use your hands to mix the meat,
panko, 1 Tbsp. Worcestershire sauce, mustard, 3 Tbsp. barbecue sauce,
salt, and pepper. Do not overwork the meat.
Shape the mixture into a long, thick log and place in an oiled baking dish.
Be careful not to pack the meat too tightly or you’ll end up with a very
dense, tough loaf.
In a small bowl, whisk the remaining 1 Tbsp. barbecue sauce, the
remaining 2 tsp. Worcestershire sauce, and the honey. Spread evenly over
the meatloaf bake for 45 minutes.
My family recommends doubling the sauce
and reserving half the sauce for serving.
