EASY STEAK AU POIVRE SAUCE Submitted by: Crystel Farina Serves: 4 persons Prep Time: 20 minutes Cook Time: 15 minutes INGREDIENTS • 4 6-8oz. filet mignon • 1 can of beef consume • 1 shallot finely chopped • 1 Tbsp. of whole green peppercorns • 2 Tbsp. butter • ½ c. heavy whipping cream • 1 c. of cognac • 1 Tbsp. of flour • salt and pepper DIRECTIONS Grill, broil, or fry the filets to your preference. My personal suggestion is grill at 500 degree for 3 minutes on each side to a rare – medium rare level. Set them aside to rest. In a large skillet on medium heat add butter until melted. When butter is melted, add shallots and sauté until translucent. Add peppercorns and flour. When the peppercorns and shallots are coated with the flour, add the c. of cognac, remove from heat and flame. When flame has burned out, return to heat and add the can of beef consume. Simmer and stir until thickens. Add heavy whipping cream and continue to simmer until thick and silky. Salt and pepper to taste. You can also slice the filet into thin strips and add to sauce to serve or plate the filet and ladle sauce over the top. I serve with grilled asparagus and a side salad. You can use anytime of whisky to make this sauce. Each will give it a slightly different flavor. It is great with Jack Daniels or other bourbon whisky. You can also add mushrooms at the same time as the shallots to add a different flavor. You can leave out the whipping cream if you are trying to decrease calories, it will still taste good, just will not have the silkiness. 27
SWEET POTATO CASSEROLE I Submitted by: Pam Jeffries INGREDIENTS Casserole Ingredients • 2½ lbs (4 c.) sweet potatoes, peeled, cooked, and mashed • ¹∕ ³ c. melted butter • 2 eggs Topping Ingredients • ½ c. chopped pecans • ½ c. brown sugar • 3 Tbsp. melted butter DIRECTIONS Mix ingredients well and spread in 1½ quart greased casserole dish. Sprinkle on topping and bake at 375 degrees for 20-25 minutes. 28
