CREAMY BANANA PUDDING<br />

This is a dish that we tend to bring to many social functions and people<br />
always ask me for the recipe because it “tastes like home.”<br />
Serves: 8-10<br />
INGREDIENTS<br />
• 1 (14-oz.) can EAGLE BRAND® Sweetened Condensed Milk<br />
(NOT evaporated milk) (I use the no-fat/low-fat version)<br />
• 1½ c. cold water<br />
• 1 (4-serving-size) package instant vanilla pudding and pie filling mix<br />
(I use the sugar-free version)<br />
• 1 (12 oz. container) Truwhip or Cool Whip Lite Whipped Topping<br />
(found in freezer section of store)<br />
• 36 vanilla wafers (I use the low fat version)<br />
• 3 medium bananas, sliced and dipped in lemon juice<br />
DIRECTIONS<br />
In large bowl, combine EAGLE BRAND® and water. Add pudding mix; beat<br />
until well blended. Chill 5 minutes.<br />
Fold in Cool Whip Lite Whipped Topping. Spoon 1 c. pudding mixture into 2½<br />
quart glass serving bowl or divide it among 8 to 10 individual serving dishes.<br />
Top with one-third each of vanilla wafers, bananas and pudding mixture.<br />
Repeat layering twice, ending with pudding mixture. Chill. Garnish as desired.<br />
Store leftovers covered in refrigerator.<br />
