PEACH COBBLER<br />

INGREDIENTS<br />
• 3 lbs. frozen peaches<br />
• 1 c. granulated sugar<br />
• 1 c. brown sugar<br />
• ½ c. Butter<br />
• 1½ tsp. vanilla extract<br />
• 1 tsp. lemon juice<br />
• 1 Tbsp. milk<br />
• 1 tsp. cinnamon<br />
• 1/8 tsp. nutmeg<br />
• 1 box pie crust<br />
• 1 deep aluminum baking pan<br />
because juices will bubble in the oven<br />
DIRECTIONS<br />
Pre-heat oven to 350 degrees<br />
Melt butter in a large pan or pot then add peaches. Next add granulated<br />
sugar and brown sugar. Add cinnamon and nutmeg. Simmer on medium heat<br />
for 10 minutes stirring frequently.<br />
Reduce heat to low then add vanilla and lemon juice. Turn off heat then slowly<br />
add milk while stirring.<br />
For the crust: Unroll the crust on a clean surface. In a small bowl mix together<br />
½ tsp. of granulated sugar and ½ tsp. of brown sugar. Lightly dust each pie<br />
crust with the sugar then gently rub to embed sugar into dough. Now cut one<br />
of the pie crust into 1-1/2 inch strips. Place the uncut pie crust in the bottom<br />
of a baking pan then bake for 15 minutes or until golden brown. After 15<br />
minutes remove from the oven and add the peach to the pan. Place the cut<br />
pie crust over top of the peaches then return the pan to the oven and bake for<br />
40 minutes or until the crust is golden brown.<br />
