TOFFEE BARS<br />

INGREDIENTS<br />
• ½ lb butter<br />
• ½ c. sugar<br />
• 15 Keebler graham crackers<br />
• ¾ c. sliced almonds<br />
DIRECTIONS<br />
Break crackers into fingers and arrange on aluminum foil on large lipped<br />
cookie sheet.<br />
Melt butter, add sugar. Stir and simmer for two minutes. Spread on<br />
crackers and sprinkle with sliced almonds.<br />
Bake at 350˚ for 11 minutes.<br />
Remove from pan to new foil at once. Store in airtight container.<br />
BANANA PUDDING<br />

Serves: 8 Prep Time: 60 minutes<br />
INGREDIENTS<br />
• 1 c. sugar<br />
• 2 Tbsp. flour - heaping<br />
• 2 c. milk<br />
• 3 eggs<br />
• 1 stick of margarine / butter<br />
• 1½ tsp. vanilla<br />
• Vanilla wafers (approx. ¾ box)<br />
• 1-3 bananas sliced<br />
• Lemon juice (optional)<br />
DIRECTIONS<br />
Mix together sugar and flour in medium bowl. Slowly stir 1 c. of milk into<br />
mixture. In a separate medium bowl, beat 3 eggs into remaining 1 c. of milk.<br />
Combine the mixtures. Mix well with a wire whisk. Strain 2-3 times, back and<br />
forth between bowls, rinsing strainer and bowl after each straining.<br />
Add the strained mixture to a deep pan along with the margarine. Heat on<br />
medium low, stirring constantly with spatula, until it thickens considerably.<br />
Whip out any lumps and remove from heat. Add vanilla. Mix well.<br />
Slice bananas to desired thickness. Dip in lemon juice (to prevent browning).<br />
Layer the bottom of an 8x8 dish with wafers. Add half of the bananas then<br />
half the pudding. Add remaining bananas and another layer of wafers. Add<br />
remainder of pudding then a final layer of wafers. Cover, refrigerate, enjoy!<br />
