Weeds have a bad reputation. People
battle with them, pulling them out,
digging them out, even resorting to
spraying them with toxic herbicides.
But we need to look at weeds in a
whole new way. We need to look at them
holistically. Weeds are actually very
beneficial as food and medicine. Weeds
are filled with necessary vitamins and
minerals and other nutrients, often at
higher levels than found in our cultivated
vegetables. And they are free!
Dandelions have been used for
centuries as food in salads, soups,
sautéed on their own, or for making
wine. They also offer healing properties
to help detoxify the liver and are also
an excellent source of antioxidants. All
parts of the plant (leaves, roots and
flowers) can be used for our benefit.
Plantain is another wonder weed.
Not only is it edible, but if you get an
insect bite, you can chew on a leaf and
place it on the area of the bite or sting,
and it will immediately reduce the pain
and swelling. The husks of the seeds are
used as a gentle but effective laxative
known as psyllium.
Purslane is found almost everywhere
and looks like a sprawling succulent
ground cover. It’s great in salads with
its slightly sour flavour and boasts
high levels of many nutrients including
omega-3 fatty acids.
Chickweed has a mild, grassy flavour
and is often used in salads or to make
a tea. It has many health benefits and
is used to make salves to treat skin
conditions.

Young lambs quarters are delightful
eaten raw or sautéed with its mild,
spinach-like flavour. It is packed with
nutrients including protein.
Always research these weeds either
by online sources or books or by taking
courses presented by qualified instructors
and make sure you can correctly identify
them as there can be many impostors
and look-alikes. Never taste anything you
cannot identify as being safe.
Never gather weeds from high traffic
areas such as roadsides because of
the high levels of pollution. Instead,
harvest them from yards where you
know no herbicides or pesticides or
other chemicals have been used. Some
people even designate a portion of
their properties to grow these plants
exclusively and consider them part of
their herb or vegetable garden.
As with all other foods new to your
palate, try a little bit first to see how
your body reacts to it.
Finally, learn how to preserve these
plants. Freezing and dehydrating are
the most common ways to stock your
pantry with these treasures. People also
make extracts and medicinal tinctures
used for many ailments.
