ABSTRACTDemography and the increasing urbanization in the cities of Burkina Faso involved astrong increase in milk and dairy pro<strong>du</strong>cts <strong>de</strong>mand. In this context of insufficiency of localpro<strong>du</strong>ction, the country resorts to the imports which generate exits of important currenciesessential for the <strong>de</strong>velopment of the country. To reverse this ten<strong>de</strong>ncy and to contribute tore<strong>du</strong>ce poverty in rural soci<strong>et</strong>y, several actions were initiated. However, these actions are oftenre<strong>la</strong>ted primarily to the upstream of the in<strong>du</strong>stry, in particu<strong>la</strong>r the gen<strong>et</strong>ic improvement andanimal health. In spite of these efforts, the consumption of imported pro<strong>du</strong>cts remains alwaysimportant and the local pro<strong>du</strong>ction has difficulty to break into the mark<strong>et</strong>. In or<strong>de</strong>r to improveconsumption of the local pro<strong>du</strong>cts, we carried out this study on milk consumption and dairypro<strong>du</strong>cts. It was con<strong>du</strong>cted in Bobo-Diou<strong>la</strong>sso, a town consi<strong>de</strong>red in Burkina Faso as thesecond pole of consumption of dairy pro<strong>du</strong>cts. Thus, the aim of this work was to quantify theflows of local milk, to i<strong>de</strong>ntify the main types of dairy pro<strong>du</strong>cts mark<strong>et</strong>ed in the city and tostudy the <strong>de</strong>terminants of the consumption of milk and the dairy pro<strong>du</strong>cts.For this purpose, we ma<strong>de</strong> a bibliographical synthesis for the quantification of flows oflocal milk, then an investigation at the distribution n<strong>et</strong>works and tranformation andmanufacturing unitsto i<strong>de</strong>ntify the dairy pro<strong>du</strong>cts and finally, with an investigation at“indivi<strong>du</strong>als” level for i<strong>de</strong>ntification of <strong>de</strong>terminants of consumption.With regard to flows, 1.991 liters of unpasteurized milk and 126 liters of curd enter inthe city daily <strong>du</strong>ring the rainy season. Moreover, 229 balls of butter are daily recor<strong>de</strong>d <strong>du</strong>ringthis season. On the other hand, flows drop and pass daily to only 601,91 liters of unpasteurizedmilk and 126 liters of curd <strong>du</strong>ring the dry season.With regard to the i<strong>de</strong>ntification of the pro<strong>du</strong>cts on the mark<strong>et</strong>, we could note a greatdiversity of imported and local pro<strong>du</strong>cts with the row of which, pasteurized fresh milk, curdand yoghurt. With concern of the <strong>de</strong>terminants, the study reveals the strong influence of theincome on the milk consumption and of the type of dairy pro<strong>du</strong>cts consumed with a range ofexpenditure of 2.129 F CFA, 3.065 FCFA, 3.212 F CFA, 5.467 F CFA and 5.000 F CFArespectively for an income lower than 30.000 F CFA, ranging b<strong>et</strong>ween 30.000 and 60.000 FCFA, 60.000 and 90.000 F CFA, 90.000 and 150.000 F CFA and higher than 150.000 F CFA.In addition, matrimonial situation also influences the consumption of milk. Thus, the resultsshowed that married people spend more money for dairy pro<strong>du</strong>cts than unmarried one, with anaverage of 2.761 F CFA against 2 2760 F CFA. The study also ma<strong>de</strong> it possible to emphasizeimportant criteria for the consumers and stimu<strong>la</strong>ting their purchases. These criteria are hygieneevoked by 26% of the surveyed people, the price (22%), the taste (17%), the avai<strong>la</strong>bility (10%),the packing (10%), the facility of use (7%) and the conservation (7%). With regard to the price,the analysis of the sensitivity reveals an acceptable price ranging from 500 to 550 FCFA theliter for pasteurized milk against 1.000 to 1.400 F CFA the kilogramme of yoghourt.Key words: Dairy pro<strong>du</strong>cts, consumption, <strong>de</strong>terminants, sensitivity to the price.IV
