MEAT SECTOR – OVERVIEW<br />
Background<br />
Analysis of <strong>the</strong> pric<strong>in</strong>g through <strong>the</strong> cha<strong>in</strong> <strong>in</strong> <strong>the</strong> meat sector requires recognition of <strong>the</strong> diversity of<br />
<strong>the</strong> value cha<strong>in</strong> <strong>in</strong> each of <strong>the</strong> major meat <strong>in</strong>dustry sectors and major trends that are affect<strong>in</strong>g<br />
overall returns to each <strong>in</strong>dustry. <strong>Industry</strong> returns are however <strong>in</strong> each case driven by <strong>in</strong>ternational<br />
trade, which <strong>in</strong> each case determ<strong>in</strong>es available farmgate returns for <strong>the</strong> animal carcass.<br />
The analysis has been undertaken across beef, lamb and pork. In terms of total value and volume<br />
of <strong>in</strong>dustry output and retail turnover, beef is <strong>the</strong> dom<strong>in</strong>ant meat segment.<br />
Australia is one of <strong>the</strong> largest consumers of processed meat on a per capita basis, yet this has<br />
been <strong>in</strong> decl<strong>in</strong>e <strong>in</strong> recent years due to competition from poultry and seafood. These have <strong>in</strong>creased<br />
largely as a result of consumer concerns for diet and health.<br />

The <strong>in</strong>fluence of trade<br />
<strong>Industry</strong> estimates as to <strong>the</strong> use of product show <strong>the</strong> importance of export markets to <strong>the</strong> beef and<br />
lamb <strong>in</strong>dustries. In <strong>the</strong> case of <strong>the</strong> pork sector, recent imports of frozen product have had a<br />
dramatic effect on product returns.<br />
Domestic market<br />
The meat <strong>in</strong>dustries feature differ<strong>in</strong>g degrees of <strong>in</strong>tegration from producer to consumer. The scale<br />
of supermarket dom<strong>in</strong>ance of <strong>the</strong> domestic meat category is common to each meat sector, due to<br />
a strong focus on <strong>the</strong> presentation, pric<strong>in</strong>g and product range. The meat <strong>in</strong>dustry has focused its<br />
promotion and market development activities at improv<strong>in</strong>g <strong>the</strong> <strong>in</strong>formation and choices available<br />
to <strong>the</strong> consumer <strong>in</strong> <strong>the</strong> form of cuts and eat<strong>in</strong>g quality. Major retailers have been best placed to<br />
optimise <strong>the</strong>se activities.<br />
