Separate wholesal<strong>in</strong>g has a major<br />

role <strong>in</strong> <strong>the</strong> value cha<strong>in</strong> with about<br />

70% of volume.<br />

• Exports of about 66,000t mostly to<br />

higher value fresh pork markets <strong>in</strong><br />

S<strong>in</strong>gapore and Japan.<br />

• Imports of 45,000t of frozen pork<br />

supplied <strong>in</strong>to <strong>the</strong> smallgoods<br />

market. This has seen sharp<br />

growth s<strong>in</strong>ce 1998.<br />

• Large number of smallgoods<br />

plants across <strong>in</strong>dustry – approx.<br />

150 <strong>in</strong> bacon, ham and<br />

smallgoods.<br />

• Fresh pork and smallgoods<br />

are sold through major<br />

supermarket cha<strong>in</strong>s and<br />

specialist butcher shops<br />

and delicatessens.<br />

As discussed above, <strong>the</strong>re are dangers <strong>in</strong> simple comparisons between farmgate and retail prices.<br />

The carcass return which drives <strong>the</strong> wholesale and OTH prices is strongly <strong>in</strong>fluenced by <strong>the</strong> returns<br />

from <strong>the</strong> processed meat market which consumes 60 per cent of output and is subject to seasonal<br />

import competition. The fluctuations <strong>in</strong> wholesale prices reflect <strong>the</strong>se forces. Processors have<br />

accord<strong>in</strong>gly sought to extract optimum value from <strong>the</strong> domestic fresh retail segment of <strong>the</strong> market<br />
