Since his return to Morelia, he has dedicated to culinary
consulting for several restaurants, he offers catering services
and is in charge of the kitchen in Chango Restaurante.
It’s called Chango because that’s the nickname his family
gave the chef and owner as a kid. “I want to create a surprise
beginning with the name”, tells chef Aguilar. Its mission is to
be an innovative and original restaurant that through quality,
great flavor, a cozy atmosphere, and the best attention to
clients achieves a pleasant and incomparable experience.
The menu is composed by first and second courses that have
an international inspiration and the hallmark of author
cuisine. For instance, we can find the fig and goat cheese tart,
dried serrano ham with balsamic reduction and arugula. We
continued with a candied pork shoulder, sweet potato puree
and brie sauce. And we cannot forget another fundamental
part which are desserts, like the ice cream tasting: apple tart
with sugar nut, vanilla with almond and orange touille, fruit
of the season, all of these accompanied by beignets.
Although the menu is fixed, dishes are added and changed
according to the season. For cooking organic produce mostly
of the region are selected. “They belong to the network
Prefiero Local that seeks to encourage producers of Michoacán
consuming what the state produces”.
