lentils, peas, etc. are important
sources of protein. Many companies
in the IPD programme have also
specialized in growing and marketing
pulses. For the European market, they
produce kidney beans, mung beans,
pigeon- and chickpeas, navy- and pinto
beans and many more.
Ethiopian cuisine also includes typical
herbs, spices and spice blends. IPD
companies bring this spice portfolio
to the European market. The range
covers dried fenugreek seeds, white
and black cumin, black cardamom,
Ethiopian basil and also chili pepper
blends such as berbere and mitmita,
as well as other Ethiopian blends.
Rich Oilseeds
Many IPD companies offer oilseeds
such as sesame, black cumin seed,
or flaxseeds for export. An Ethiopian
specialty is Tahin, a sesame paste. The
IPD companies process the sesame
seeds without additional supplements
to preserve its naturalness. In addition,
the seeds are also processed into
high-quality oil. Ethiopia is known for
its black cumin seed oil, among other
products.
The fatty, dark gold-colored oil from
black cumin seeds consists of up
to 60 percent linoleic acid, and also
contains other polyunsaturated fatty
acids. In addition, black cumin seed oil
has a high content of essential amino
acids, vitamins of the B-complex and
vitamins A, C, D and E. Even Cleopatra
is said to have used the oil for her hair
and Hippocrates described the oil’s
effect on digestive problems. Today,
health-conscious consumers from all
over the world demand the oil with the
spicy taste, and there is a lively interest
in the European market.
True black cumin is not related to
cumin or caraway. For the production
of the fatty oil, the seeds from the fruit
capsules of the plant are used. The
oil is cold pressed and filtered. This
preserves all valuable ingredients.
The oil content in the black cumin
seeds is low compared to other seeds.
Accordingly, the production is complex,
good machines are needed to extract
the high-quality oil.
