egans only eat plant-based foods. No animal meat. No dairy. No eggs. No honey.<br />
(Honey comes from the tiny 'animal' critters called bees!) People are vegans for many<br />
reasons: to eliminate cruelty to animals, to help the environment (animal agriculture takes a<br />
toll on the earth) & because of the many health benefits. (Medical research finds Vegans have<br />
less heart & brain disease, colon & lung cancer, diabetes, obesity & other debilitating<br />
conditions.) Many reasons to give veganism a try! (I promise my recipe below is sooo delicious.)<br />
Jan's *Good-4-U Vegan Creamed Spinach<br />
• 1/2 cup cashew nuts (Soak<br />
overnight or pour boiling water<br />
over nuts & soak 1 hr. Drain.)<br />
• 1/2 medium onion (minced)<br />
• 1 or 2 cloves garlic (minced)<br />
• 14 to16 oz. frozen or raw<br />
spinach<br />
Saute onion & garlic in<br />
water or oil. Add spinach and<br />
heat. Blend cashews & 1/2 cup<br />
water on high power. Stir<br />
cashew cream into spinach.<br />
Add more water as needed.<br />
Salt & pepper to taste. Enjoy.<br />
