il tema della carne. Dire<br />
carne signi ca già connotare con<br />
precisione alcune persone rispetto<br />
ad altre, alcuni ristoratori rispetto<br />
ad altri, alcune zone della<br />
Penisola e non altre.<br />
O forse no... i nostri consigli sono<br />
rivolti anche a chi non l’apprezza,<br />
a chi non la cucina, a chi vive in<br />
zone di mare dove il piatto forte<br />
deve essere, quasi necessariamente<br />
viene da dire, il pesce.<br />
Se la carne non piace, forse è<br />
perché ci si ferma a uno stadio<br />
precedente a quello della ricerca<br />
della qualità, sotto tutti i pro li,<br />
dall’allevamento alla macellazio-<br />
ne; se lo chef non la predilige, è<br />
il momento di svelargliene i segreti;<br />
se la materia prima immediatamente<br />
disponibile è di mare,<br />
l’occasione è buona per osare il<br />
cambiamento.<br />
A chi è già esperto, a chi ha fatto<br />
della carne il suo biglietto da visita,<br />
si può solo dire: attenzione a<br />
non abbassare la guardia, perché<br />
la buona riuscita di una portata di<br />
carne dipende quasi interamente<br />
dal livello qualitativo del taglio<br />
che si mette in tavola, dalla combinazione<br />
vincente tra le percezioni<br />
di vista e olfatto, delle quali<br />

capacità di offrire qualcosa che<br />
a casa sia impossibile riprodurre,<br />
con strumenti, tecniche e modalità<br />

Viviamo un tempo in cui non<br />
basta presentare un menu genericamente<br />
“in regola”: chi si siede<br />
al tavolo del ristorante si aspetta<br />
che le portate giusti chino il<br />

Tra i suoi piatti forti sono molte le ricette a base di carne.<br />

la certificazione, la catena di ap-<br />
provvigionamento, la conservazione sottovuoto, la fiducia nel fornitore<br />
sono tutti aspetti imprescindibili per un ristoratore abituato a lavorare<br />
carni di qualità. agli antichi Sapori di tramonti, ad esempio, nell’entroterra<br />
della Costiera amalfitana, il giovane chef Giuseppe Francese<br />
valuta con attenzione la tracciabilità e l’alimentazione degli animali prima<br />
di fare gli acquisti (www.cucinaantichisapori.it). il suo è un ristorante<br />
dalla doppia anima: pesce soprattutto in estate e carne con l’arrivo<br />
dell’autunno. Francese raccoglie gli ortaggi dall’orto di famiglia e acquista<br />
carne sia da fornitori locali, con cui c’è un rapporto di fiducia basato<br />
sulla conoscenza diretta, che da gruppi toscani, come la lem Carni. Dai<br />
primi si rifornisce di pollame, conigli e suini alimentati in modo naturale,<br />
con piccoli frutti e castagne, che assicurano sostanza e gusto alla materia<br />
prima. Dalla seconda acquista invece chianina, bistecche di manzo, carpacci.<br />
il tutto per una cucina tradizionale alleggerita, con ricette come il<br />
filetto di maiale avvolto in pancetta e favette fresche alla menta, l’entrecote<br />
di manzo alla griglia con aceto balsamico o il filetto di maiale tostato<br />
in granella di pistacchio e cotto alla griglia. Pietanze che si accompagnano<br />
bene con i saporiti vini rossi della zona, a partire dal tintore di tramonti,<br />
ma anche con più leggeri rosati, in particolare per le carni bianche.<br />
«Per noi la conoscenza della filiera è alla base della scelta di acquisto<br />
- ci dice Giuseppe Francese -. Cerchiamo sempre di andare alla fonte per<br />
vedere come vengono trattati gli animali. Ci affidiamo alle certificazioni<br />
di qualità e tracciabilità, a produttori con un proprio allevamento, e<br />
quando questo non è possibile, come nel caso dei piccoli fornitori locali<br />

molto particolare e piacevole. È ricavato<br />
da un’antica cisterna che scende una ventina<br />
di metri in profondità. Da visitare insomma<br />

di suini o pollame, la conoscenza diretta è una condizione necessaria».<br />
la carne, come ogni altro alimento, deve essere cucinata in modo appropriato,<br />
con la giusta tecnica e tempo di cottura a seconda del tipo di<br />
ricetta e del risultato che si vuole raggiungere. oltre alla classica cottura<br />
alla griglia, o a quella in forno, prendono sempre più piede anche nei locali<br />
tradizionali tecniche come il sottovuoto o la bassa temperatura, che<br />
permettono buoni risultati in termini di tenerezza e conservazione delle<br />
proprietà organolettiche. questo anche quando si cucinano parti meno<br />
nobili degli animali, come avviene in tante cucine regionali, a partire<br />
da quella romanesca. l’osteria di San Cesario, alle porte di roma, è il<br />
locale della cuoca televisiva anna Dente, una vera signora romana che<br />
non sfigurerebbe nei vecchi film con alberto Sordi, anna magnani o<br />
aldo Fabrizi (www.osteriadisancesario.it). la sua trattoria di San Cesario<br />
è meta di buongustai della capitale e il motivo è semplice: si fa una<br />
buona cucina della tradizione, con i prodotti della campagna romana.<br />
qui il pesce non è di casa anche perché la signora Dente rappresenta<br />
una storica famiglia di macellai, che la carne la conosce molto bene.<br />
il locale è stato aperto nel 1995 come appendice dell’attività principale<br />
della famiglia Dente Ferracci, la macelleria aperta nel 1947, oggi chiusa,<br />
anche se l’attività continua esclusivamente al servizio dell’osteria. questo<br />
locale propone la cucina di una volta, buona, abbondante, saporita, piena<br />
di sughi e piatti di carne povera, interiora e frattaglie. Dal padre e dal<br />
nonno, scortichino al mattatoio di monte Compatri, la sora anna ha<br />
imparato a conoscere le diverse tipologie e i tagli di carne, a selezionarli<br />
per cucinarli nelle ricette più adatte, a ottenere piatti gustosi anche da<br />
ingredienti poveri.<br />
Golose frattaglie<br />
la carne è cucinata con diverse tecniche, dai più classici arrosti alla<br />
cottura al forno e al tegame, oppure all’allesso, da prenotare con qualche<br />
giorno di anticipo. un capitolo a parte sono i piatti preparati con le<br />
frattaglie: animelle e diggiuna d’abbacchio o “co li funghi porcini der<br />
monte algido”, e poi Coratella d’abbacchio, Pajata de vitella mongana<br />
arrosto e ovviamente trippa, il quinto quarto della tradizione laziale.<br />
un altro ristorante che valorizza i piatti di carne è la nuova osteria Pico<br />
di matera, che in cucina arruola la cuoca enza leone, per anni tra i
fornelli di lucanerie, sempre ai Sassi, pri-<br />
ma di aprire in proprio questo locale mol-<br />
to bello, ricavato in un’antica cisterna che<br />
scende una ventina di metri in profondità<br />
su più livelli (www.osteriapico.it). in cucina<br />
la signora leone si diletta tra conigli all’alloro,<br />
zuppe di cinghiale e porcini, tagliate<br />
di agnello con verdure trifolate alla menta.<br />
«le tecniche di cottura sono quelle della<br />
tradizione - ci dice la leone -. Per un tipo di<br />
cucina come la nostra ovviamente la scelta<br />
dei buoni ingredienti è fondamentale. noi ci affidiamo a una rete di fornitori<br />
locali con cui abbiamo rapporti ormai consolidati».<br />
Valorizzazione delle razze<br />
il mondo della carne consente inoltre di valorizzare razze locali e autoctone.<br />
È il caso della Chianina o della Fassona, ma anche della razza<br />
bovina Podolica transumante, come sta facendo il noto chef Pietro<br />
lecce, di la tavernetta, di Camigliatello, in Calabria (www.latavernetta.info).<br />
la scelta della materia prima si basa su un’accurata ricerca<br />
della qualità e sull’uso di prodotti locali. «la Podolica - ci dice lecce - è<br />
una razza bovina allevata prevalentemente nelle aree interne del sud,<br />
dalla quale si ottiene carne di buona qualità e latte in grande quantità.<br />
Sono bovini di mole con un’eccezionale capacità di adattamento ad<br />
ambienti difficili. questa razza oggi è al centro di un progetto di valorizzazione<br />
del Consorzio a.Pro.Zoo che riunisce una ventina di allevatori<br />
della provincia di Cosenza con 5mila capi iscritti all’albo zoologico,<br />
sostenuto anche dal Parco della Sila».<br />
il disciplinare prevede precise regole per la durata e le temperature<br />
della frollatura, oltre che per la conservazione e la vendita. Circa 600<br />
capi vanno in macellazione dopo la transumanza: vitelli di 2 anni<br />
di razza Podolica. un analogo progetto di valorizzazione della carne<br />
è stato promosso di recente dalla provincia di Grosseto. al centro<br />
dell’iniziativa il suino macchiaiolo, i bovini maremmani e l’agnello<br />
di pecora maremmana. il progetto vagal ha l’obiettivo di promuovere<br />
l’uso di queste carni tra i ristoratori locali.<br />

Viva la ciccia! <strong>Il</strong> tormentone di Dario Cec-<br />
chini, arcinoto macellaio di Panzano in Chianti è quanto mai attuale,<br />
visto la fortuna dei ristoranti specializzati in carne.<br />
Come, per esempio, l’elegante ristorante Barbacoa (Mi), decima churrascaria<br />
nel mondo del gruppo brasiliano Barbacoa, nonché la prima che il<br />
gruppo inaugura in Europa (barbacoa.it). Un locale raf nato (il target di<br />
prezzo è circa 70 euro per la cena à la carte), con ampi spazi fra un tavolo<br />
e l’altro per consentire un lavoro agevole ai passadores, i camerieri che<br />
portano in tavola i lunghi spiedi verticali del “rodizio”. Al Barbacoa il<br />
rodizio (a 39 euro) è “all you can eat”: una quindicina di camerieri girano<br />
per la sala con gli spiedi e il gettone rosso/verde di ogni commensale è il<br />
segnale di stop o via libera ai circa 14 assaggi, fra cui molti sono quelli di<br />
manzo di tagli diversi e dai nomi suggestivi: picanha, costela, fradignha,

alcatra, cupim. E poi agnello, pollo, maiale, tacchino, salsicce. Salvo un<br />
paio di specialità che richiedono lunghe cotture (ad esempio il cupim, la<br />
gobba, che richiede una cottura di oltre 4 ore), tutto è grigliato al momento,<br />
mentre il cliente si serve liberamente dal buffet per gli antipasti.<br />
Altra case history di successo è quella di Maxelà (www.maxela.it), locale<br />
nato 8 anni fa a Genova al posto di una macelleria di cui ha mantenuto<br />
il bancone all’ingresso, dove ora sono in mostra i tagli che i clienti possono<br />
scegliere e far cucinare. In pochi anni i locali sono diventati 10, di<br />
cui due a Genova, altrettanti a Milano e Roma, uno a Torino, Livorno,<br />
Modena e Rimini. Qui non siamo di fronte a macellai di tradizione, ma<br />
- come spiega Roberto Costa, uno dei soci: «Ogni locale ha un macellaio<br />
che consiglia, prepara le tartare, i carpacci e i tagli che passano in<br />
cucina. Questo esperto ha un ruolo fondamentale per la vendita e la sua<br />
formazione è curata con apposito training». Cosa determina il successo<br />
di questa piccola catena? Risponde Costa: «La qualità della carne in<br />

L’idea da copiare: poche proposte, ma<br />
primo luogo. Non per niente il nostro punto di forza è quella cruda, ad<br />
esempio la tartare al coltello in tre maniere (con bacon croccante, mediterranea<br />
o alla francese), il carpaccio o il misto di crudi di carne. Ma a<br />
fare la differenza è anche il piatto che l’ospite non si aspetta, ad esempio<br />
la trippa, il fegato o le cervella, con cui abbiamo delizzato molti clienti».<br />
E naturalmente fondamentale la scelta e il modo di trattare le carni di<br />
Scottona, bovino femmina tra i 15 ed i 21 mesi di età che non ha ancora<br />
gliato. Un animale in una condizione ormonale molto particolare, che<br />
favorisce la crescita organica e il deposito di grasso e quindi una carne di<br />
particolare pregio, il cui quarto posteriore (coscia e carré) viene frollato<br />
dalle 2 alle 3 settimane». Dopo di che bastano anche solo un vivace fuoco<br />
di griglia, olio buono e un’idea di sale per far felice il cliente.<br />
Vanta una solida expertise nel mondo della macellaria il Muu di Parabiago<br />
(muugrill.it), ristorante di proprietà della famiglia Marchiante, la<br />
cui azienda rifornisce di carni molti ristoranti del Nord Italia ed è pure<br />
titolare del locale meneghino El Bechée, altro punto di riferimento<br />
per gli amanti del genere. <strong>Il</strong> locale nasce dalla totale ristrutturazione<br />
del negozio di Parabiago, che da tradizionale macelleria-salumeria si è<br />
trasformato in un ristorantino con annesso negozio di macelleria e gastronomia,<br />
dove trovano posto una trentina di coperti. Un ambiente<br />
piacevole dove si trovano poche ma curate proposte in cui la carne è<br />
protagonista. Ad esempio lo stufato di manzo al Morellino di Scansano<br />
con polenta, la tagliata “all’antica”, la tartare e, particolarmente<br />
graditi ai bambini, le polpettine o l’hamburger Muu con patatine fritte,<br />
dove le patate sono quelle fresche e la carne è polpa selezionata,<br />
macinata e cotta al momento.<br />

Tradizionali, tradizionalissimi. In<br />
fatto di carne gli italiani non tradiscono. Ma qualcosa cambia. Ogni<br />
anno ogni italiano consuma circa 92 chili di carne, tuttavia i vegetariani<br />
crescono esponenzialmente. Nel 2000 erano una quota marginale<br />
delle popolazione, appena 1,5 milioni, ma secondo una stima<br />
di AcNielsen rielaborata da Eurispes nel 2011 erano già 7 milioni e<br />
con molta probabilità saranno 30 milioni nel 2050. Le motivazioni<br />
che portano al vegetarianesimo sono diverse, in parte etiche, ma soprattutto<br />
salutistiche. «Da qualche anno è in atto una campagna di<br />

di SalsoCarni - che fa capo a noti oncologi che attraverso<br />
campagne sui mezzi stampa dissuadono le persone dal consumo di
istecche e affini». Attualmente la carne rappresenta il 21,5 % della<br />
spesa degli italiani ma c’è da supporre, davanti a tale tendenza, che<br />
non sarà così a lungo. È importante allora capire costa sta accadendo<br />
nell’immaginario di questo prodotto e adeguarsi.<br />
Secondo le analisi Ismea l’etica e la sostenibilità si pongono al centro<br />
delle scelte di consumo parallelamente alla sensibilità ai prodotti<br />
tipici e al chilometro zero. I nutrizionisti del resto consigliano<br />
di variare il più possibile la dieta e mangiare carne solo due o tre<br />
volte alla settimana. È ragionevole pensare che chi sceglie questo<br />
orientamento preferirà comprare una volta alla settimana una fettina<br />
che considera di alta qualità e cioè, sempre più spesso biologica.<br />
Nell’allevamento bio le eventuali cure veterinarie utilizzano prodotti<br />
omeopatici o toterapici mentre gli antibiotici che possono lasciare<br />
residui nei cibi vengono utilizzati solo se indispensabili per la vita<br />
dell’animale. In questo modo l’allevamento biologico permette di<br />
realizzare prodotti più sani e naturali, senza la presenza di residui<br />
tossici, e aiuta a preservare il suolo agricolo sempre più inquinato<br />
dall’uso indiscriminato di prodotti chimici. Nel settore operano circuiti<br />
di distribuzione che privilegiano i prodotti biologici e valorizzano<br />
la liera corta. In particolare, “Mangiocarnebio” è un progetto<br />
di liera promosso da Prober sul territorio dell’Emilia Romagna per<br />
promuovere e valorizzare le produzioni biologiche locali di carne bovina.<br />
Mangiocarnebio da settembre ha esteso il servizio a domicilio<br />
di carne biologica a liera corta anche alla ristorazione collettiva<br />
nelle mense scolastiche di alcuni centri in provincia di Bologna.<br />

con lentezza ma inesorabilmente a organizzarsi per raggiungere una<br />
domanda che si fa sempre più pressante. E lo fa non solo nei canali<br />
specializzati come i negozi delle catene bio, gruppi di acquisto e ristoranti<br />
specializzati ma anche attraverso mercati e mercatini settimanali<br />
sempre più affollati di consumatori consapevoli. E consapevoli<br />
soprattutto del fatto che l’allevamento dei cosiddetti animali da bistecca<br />
(27 miliardi di capi in tutto il mondo) ha un costo ambientale<br />
altissimo. Secondo dati Fao un chilo di carne necessita di 15 mila<br />
litri di acqua ed è responsabile, in percentuale variabile tra il 14 e il<br />
18%, delle emissioni di gas serra. Ritorna in auge come ai tempi della<br />
prima guerra mondiale la MeatLess Monday una campagna internazionale<br />
che incoraggia a non mangiare carne il lunedì per migliorare<br />
la propria salute e quella del pianeta. Dal 2009 la città di Ghent in<br />
Belgio è la prima città con una giornata uf cialmente vegetariana<br />
mentre dal marzo di quest’anno il governo coato ha escluso la carne<br />
al lunedì dai menù del ministero dell’Ambiente.<br />
I fattori per la scelta<br />
Tutto questo sembrerebbe predisporre a una rivoluzione bio anche nel<br />
canale horeca e invece «<strong>Il</strong> bio, comunque, non funziona molto - continua<br />
Toscani in armonia con le opinioni di tutti gli altri intervistati<br />
in questo articolo -. Naturalmente i prodotti biologici e quindi anche<br />
la carne sono richiesti negli agriturismi e ormai da quasi tutte le<br />
mense scolastiche e gli ospedali. <strong>Il</strong> ristoratore che ricerca la qualità<br />
dei prodotti valuta la qualità della carne da fattori come la tipologia<br />
di animale, le condizioni in cui è vissuto e cosa ha mangiato in stalla.<br />
Questo determina, in effetti, quel rapporto grasso magro che determina<br />
sapore e resa di una bistecca o di uno spezzatino».

Insaporire e ammorbidire con fantasia<br />
Una volta bastava l’acqua di mare. È proprio da<br />
questa, infatti, che deriva il termine “marinatura”, una tecnica di preparazione che - lo<br />
si è capito fin da tempi antichi - era utilissima per conservare, ammorbidire e insaporire<br />
le materie prime, carni e pesci in primis. Acqua e sale, dunque, vale a dire salamoia,<br />
liquido a cui in seguito sono stati aggiunti ingredienti acidi (limone, aceto, vino) che<br />
favoriscono la conservazione e riducono la proliferazione batterica. Queste le origini.<br />

Oggi le marinature sono qualcosa di articolato e fantasioso, non più<br />
usate solo per conservare, ma ampiamente utilizzate dai professionisti<br />
per accentuare i sapori, aromatizzare gli ingredienti o<br />
effettuarne una sorta di precottura, che permette di<br />
ridurre i tempi della cottura vera e propria.<br />
Se olio e limone sono la base delle marinature<br />
classiche (ma attenzione a calibrarli,<br />
possono sovrastare i sapori più delicati),<br />
le possibili varianti e mix sono in niti,<br />
oggi più che mai pensati per rispettare il<br />
gusto originario dell’ingrediente, magari<br />
solo rendendolo più persistente al palato.<br />
A fare il punto sulle tecniche di marinatura<br />
è il libro dello chef Andrea Ribaldone (già cuoco<br />
stellato de La Fermata di Spinetta Marengo, ora<br />
in Giappone per nuove esperienze gastronomiche), che<br />
esplora le varie possibilità di marinare a secco o in liquidi carne,<br />
pesce e persino verdura o frutta.<br />
Sottovuoto, nuovo “ingrediente”<br />
Essenziale se non indispensabile, in questo approccio alle marinature<br />
moderne, l’uso del sottovuoto. Da un punto di vista sico, condizionare<br />
sottovuoto la carne o il pesce insieme alla relativa marinatura<br />
fa sì che il condimento penetri nell’ingrediente per osmosi con<br />
maggiore facilità e rapidità. Un vantaggio che si assomma a quello<br />
di poter utilizzare una quantità minore di spezie e aromi, che grazie<br />
all’uso del sottovuoto non si disperdono con l’acqua di cottura.<br />
Unica avvertenza, se si utilizzano macchine per sottovuoto a<br />
estrazione, non riempire i sacchetti (grandi) mai oltre la<br />
metà quando si è in presenza di liquidi.<br />

trait-d’union fra l’acidulo-dolce delle mele e la carne, mentre una<br />
marinatura di <strong>24</strong> ore a base di birra scura, sedano, carota e cipolla<br />
può dare la marcia in più alla coda di manzo; la stessa marinatura<br />
va poi utilizzata come in cottura per stufare almeno un paio d’ore la<br />
coda, servita in ne con zucca al forno, fondo di cottura frullato e un<br />
pizzico di polvere di malto.<br />
Divagazioni sul tema<br />
Necessariamente più veloci e delicate le marinature destinate al<br />
pesce, che possono prevedere anche l’uso della frutta, specie quella<br />
leggermente acidula. Ad esempio il trancio di dentice marinato a<br />
secco per almeno sei ore coperto con fettine di papaya, poco sale<br />
e pepe. <strong>Il</strong> pesce, spadellato, viene servito sopra le fettine di papaya<br />
della marinatura e accompagnato da un’insalatina aromatica condita<br />
con un lo d’olio e gorgonzola naturale. Provocatorio e insolito…<br />
come insolito è il trancio di salmone marinato semplicemente per<br />
40 minuti con caffè in polvere e sale grosso, appena scottato in padella<br />
e servito con un dressing a base di yogurt aromatizzato con<br />
limone e zenzero e misticanza.<br />
La sperimentazione delle marinature new style si estende no alle<br />
uova (marinate con zucchero e sale) o alla frutta, tenuta sottovuoto<br />
con sciroppo di zucchero aromatizzato con fava di tonka, vaniglia,<br />
cardamomo e anice stellato. Concetti interessanti e alla portata di<br />
tutti, per una nuova frontiera del gusto.

g 50 concentrato di pomodoro, g 1 basilico secco, g 100 olio evo.<br />
Procedimento Emulsionare e porre in sottovuoto a 28° per 40<br />
minuti. Lasciare decantare affi nché si dividono le 2 parti.<br />
PER LA POLPA DI POMODORO E LAMPONI<br />
La polpa di pomodoro ricavata in precedenza dalla preparazione<br />
dell’olio al pomodoro, g 50 lamponi, g 20 olio evo, sale, pepe bianco.<br />
Procedimento Frullare tutto. Porre su foglio di carta da forno e far<br />
asciugare un’ora in forno ventilato a 70°. Conservare in vasetto.<br />
PER LA CARNE<br />
g 400 di carne di manzo, g 90 di sale grosso marino integrale, g 30<br />
zucchero di canna bio, 1 litro di acqua gasata.<br />
Procedimento Massaggiare la carne con ii mille aghi manuale,<br />
affi nché risulti ben triturata. Metterla nell’acqua gassata fredda per<br />
circa 10 minuti, scolare bene, condire con sale e zucchero e mettere in<br />
sottovuoto per 1 ora a +4°. Lavare sotto acqua fredda ed asciugare.<br />
PER LA FOCACCIA INTEGRALE ALLE OLIVE<br />
Prima fase g 20 farina forte (w400), g 30 farina integrale, g 3<br />
zucchero di canna, g 4 lievito di birra, g 10 yogurt magro, g 15 acqua.<br />
Impastare velocemente e lasciare riposare per <strong>24</strong> ore a +4° in<br />
frigorifero ben coperto e con un peso sopra.<br />
Seconda fase <strong>Il</strong> giorno dopo unire g 1 lievito di birra, g 50 farina<br />
integrale, g 35 acqua, g 20 di paté di olive nere, g 2 di porcini secchi<br />
frullati, g 0,5 bicarbonato. Impastare bene portando l’impasto a circa<br />
<strong>24</strong>°, quando l’impasto e tende a “cadere”unire il sale, impastare fi no<br />
a 26°. Formare una palla, lasciare riposare per 10 minuti e quando<br />
l’impasto sta per gonfi are, stendere su teglia unta d’olio. Spruzzare la<br />
focaccia di acqua salata e mettere a lievitare a 28° fi no al raddoppio<br />
della massa. Cuocere in forno a vapore forzato (125°) per 10 minuti.<br />

cializzazione” geogra ca, o meglio l’amore che certe zone riservano a<br />
particolari tipi di carne, non è certo una novità nel nostro Paese. Si<br />
va dall’abbacchio romano, alla pecora sarda a tutti prodotti che sono<br />
piatti tipici dei menù più tradizionali e che naturalmente costituiscono<br />
una referenza importante per gli operatori delle aree. Si tratta spesso<br />
di prodotti stagionali che essendo indicati nelle guide, i turisti si<br />
aspettano di trovare come colore locale in ogni mese dell’anno.<br />
Quasi analogo il discorso per la cacciagione che trova entusiasti appassionati<br />
solo in luoghi deputati alle uscite fuori porta quindi in ristoranti<br />
specializzati in località che si reputano a contatto con la natura siano<br />
esse Alpi, Appennini o lande boschive.<br />
Caratteristiche nutrizionali<br />
La carne degli animali selvatici possiede doti nutrizionali che ne fanno<br />
un alimento magro, sano e ricco di proteine, con un contenuto di grassi<br />
mediamente tra il 2 e il 4%, tuttavia non sono richieste da i più se non<br />
nelle esperienze turistiche. «<strong>Il</strong> più delle volte si associa al concetto di<br />
selvaggina tutto il particolare processo di frollatura e quindi si ritiene<br />
che preparare della selvaggina richieda una sapienza particolare. In<br />
generale però è considerata un’esperienza speciale il consumo legato a<br />
un viaggio, ad un ambiente più sano e naturale. «Per questi motivi il<br />
consumo di cacciagione anche nelle aree urbane più vicine alle aree<br />
deputate è molto ridotto - spiega Fiorenzo Santini, presidente di Speca<br />
Alimentari srl -. Fanno eccezione quaglie, fagiani, lepri e cinghiali<br />
che a volte si trovano anche al supermercato e che quindi le persone<br />
sono abituate ad usare. Si tratta però di quantità così esigue che non<br />
costituiscono neppure una nicchia di mercato».<br />
È invece pratcamente esaurita l’esperienza della carne di animali esotici<br />
come struzzi o emù che no al 2006 sembravano dare buone prospettive<br />
agli allevatori (si era addirittura costituita una associazione<br />
nazionale di allevatori di struzzi). «Si è trattato di una moda sviluppata<br />
in un periodo in cui la maggiore stabilità economica consentiva a molti<br />

Non mancano gli estimatori di un buon<br />
bollito, bell’esempio di piatto gustoso realizzato<br />
con tagli cosiddetti “poveri”.<br />
questa tendenza si è assistito ad una<br />
new wave veggie, salutista, d’ispirazione<br />
animalista e naturista che ha a<br />
sua volta disincentivato il consumo<br />
di proteine animali.<br />
Come spesso succede, si tende a reagire<br />
a un problema adottando scelte<br />
estreme, come la messa al bando o<br />
la drastica riduzione del consumo di<br />
carni. Mentre è bene ricordare che<br />
una dieta equilibrata deve sì prevedere<br />
il consumo di vegetali, frutta e<br />
verdura, legumi, pani e farine integrali<br />
e pesce, ma non deve criminalizzare<br />
il consumo di carne. Va solo<br />
evitato l’abuso, dando via libera a<br />
carni provenienti da allevamenti<br />
controllati e sicuri.<br />
Se parliamo con Silvio Brarda, premiato<br />
artigiano macellaio di Cavour<br />
(To), scopriamo che in macelleria si<br />
vende oramai solo la parte più nobile<br />
del posteriore bovino, che equivale<br />
ad un 30% dell’animale. Una<br />
tendenza ben diversa da quella in<br />
auge nella cultura contadina di un<br />
tempo che predicava che dell’animale<br />
“non si butta via niente” e<br />
che vedeva anche nella gastronomia<br />
del quinto-quarto una buona<br />
pratica ecologica e in grado di farci<br />
risparmiare.<br />
L’invito è quindi a consumare anche<br />
i tagli più a buon mercato, indispensabili<br />

In this edition, once again, we’ll go<br />
through the meat subject. Using the<br />
word “meat”means to point out some kind<br />
of people instead of others, some restaurant<br />
instead of others, some areas of the<br />
Peninsula instead of others. Or maybe<br />
not! Our advises are addressed to those<br />
who don’t appreciated it, to those who<br />
don’t cook it, and to those who live close<br />
to the beach where the main dish is, of<br />
course sh. If someone doesn’t like meat,<br />
maybe it’s because he/she has stopped at<br />
the stage before the one called “search of<br />
quality”; form all points of view, such as<br />
breeding and slaughtering. If the chef doesn’t<br />
pick a meat dish, it’s time to show him<br />
the secrets. If the rst row material useful<br />
is the sea, well, this is the best occasion<br />
to make a big change. To those who’re experts,<br />
those who made meat their business<br />
card, we can just say: try to be very careful<br />
because e real success of a meat’s course,<br />
totally depends on the quality level of the<br />
price that you put on the table. Also it depends<br />
on the winner combination between<br />
sight and smell’s perceptions, of which<br />
the taste will be the obvious consequence.<br />
I believe the secret of a great meat restaurant,<br />
resides on the capacity of offering<br />
something that is impossible to make in<br />
our home, with instruments and modality<br />
that just make the difference. We live on a<br />
time when presenting a menu that is simply<br />
ne with rules, is not enough. Who sits<br />
on the table of a restaurant, normally assumes<br />
that the courses justify the price. This<br />
is the reason why we offer a guide of meat<br />
cuisine, an aliment that is loved and challenged,<br />
that lives on the freshness wire.<br />
It is the aliment that by itself can make a<br />

Certi cation, supply chain, storage,<br />
vacuum, con dence in the supplier<br />
are all essential aspects for a restaurateur<br />
who is used to work with meat quality.<br />
At Antichi Sapori of Tramonti,<br />
for instance, in the inland of Costiera<br />
Amal tana (Amal coast), the young<br />
chef Giuseppe Francese, checks very carefully<br />
the traceability and the animal’s<br />
alimentation before making purchases<br />
(www.cucinaantichisapori.it). His restaurant’s<br />
got a double soul: on summer<br />
they offer mostly sh; they begin offering<br />
meat, instead, with the arrival of<br />
the fall, right when the wood of the area<br />
is getting ready to make typical great<br />
fruits and vegetables, such as mushrooms<br />
and chestnuts. Francese crops the<br />
vegetables from his family garden and<br />
he buys meat, both from the local suppliers,<br />
with whom he has a trustful relation<br />
based on a direct knowledge, and<br />
from Toscan groups, like the Lem Carni.<br />
From the rst ones, he gets his stock of<br />
poultry, rabbits and pork, fed in a natural<br />
way, with little fruits and chestnuts that<br />
ensure the substance and avor of the<br />
raw material. From the second ones instead,<br />
he buys chianina, beef steaks and<br />
carpaccio. Everything for a lightened<br />
traditional cuisine, based on recipes like<br />
pork llet surrounded by pancetta and<br />
fresh mint little broad bean; the entrecote<br />
of beef grilled with balsamic vinegar<br />
or the toasted pork llet with chopped<br />
pistachios, which gets grilled at the later<br />
stage. These are all dishes, which should<br />
be accompanied by the typical tasty red<br />
wines of the area. First of all the Tintore<br />
di Tramonti, and the light rosè as well<br />
that is suggested with white meat.<br />
“For us, the die’s knowledge is on the<br />
base of our choice of purchasing”, says<br />
Giuseppe Francese. “We always try to<br />
get to the source to check out how the<br />
animals get treated. We rely on certi cations<br />
of quality and traceability; we rely<br />
on producers who have their own breeding,<br />
and when this can’t be realized,<br />
(like in the case of local pork and poultry<br />
suppliers), the direct knowledge is a<br />
must. Meat, as any other aliment, has to<br />
be cooked in the appropriated way and<br />
with right technics. The cooking time<br />
depends on the kind of recipes, or on the<br />
result we want to reach. For the classing<br />
grilled cooking, or the oven’s one, are<br />
being applied technics, such as vacuum<br />
and low temperature, which allow great<br />
results in terms of tenderness and preservation<br />
of the organoleptic properties.<br />
This works also when less noble animal’s<br />
parts get cooked, as it happens in a lot<br />
of regional cuisines, beginning with the<br />
one from Rome.<br />
The Osteria di San Cesario, at the<br />
gates of Rome, is the restaurant of the<br />
TV presenter, Anna Dente, a real roman<br />
woman, who would never cut a poor -<br />
gure on old movies with Alberto Sordi,<br />
Anna Magnani o Aldo Fabrizi (www.<br />
osteriadisancesario.it). Her trattoria, at<br />
San Cesario is destiantion of the majority<br />
of capital’s gourmets. The reason is<br />
very simple: they have just great traditional<br />
food, using products from the roman<br />
countryside. Here, sh wouldn’t be made<br />
because Ms Dente represents a historic<br />
butches’ family, who do know meat well.<br />
The restaurant was opened in 1995, as<br />
rst principal activity of the family Dente<br />
Ferracci; the butchery that was opened<br />
in 1947 today is closed, even though<br />
the activity keeps working exclusively<br />
on the Osteria. Her restaurant offers the<br />

old time Italian cuisine, good, abundant,<br />
tasty, full of sauces and based on simple<br />
meat dishes, entrails and offal. From her<br />
father and from her grandfather, at the<br />
slaughterhouse of monte compatri, the<br />
sora anna learned to know the different<br />
meat’s types and cuts. She also got to<br />
know how to pick carefully the various<br />
kinds of meat, in order to cook it later<br />
on, using the best and suitable recipes,<br />
and also to get tasty dishes gotten from<br />
poor ingredients as well.<br />
meat is cooked with different technics,<br />
from the most classic roast meat,<br />
the oven cooking and skillet, or all’allesso,<br />
which is better booking with a little<br />
advance.<br />
a separate chapter are dishes prepared<br />
with giblets: animelle with an addition<br />
of lamb or with porcini mushroom<br />
from monte algido, and then coratella<br />
of lamb, Pajata of veal, mongana roast<br />
and of course tripe, the fifth quarter of<br />
the lazial tradition.<br />
these are recipes that come from the<br />
old times when people used to try not to<br />
throw out any slaughter product, which<br />
used to be picked up and cooked with<br />
creativity in order to get tasty dishes<br />
with a reasonable price.<br />
another restaurant that valorizes<br />
meat dishes is the new osteria Pico of<br />
matera, where in the kitchen we have<br />
enza leone, who for years has been<br />
between stoves in lucanerie, before to<br />
open her own beautiful restaurant. the<br />
restaurant got housed in an old cistern<br />
down twenty feet deep on multiple levels<br />
(www.osteriapico.it). In the kitchen ms<br />
leone has fun between rabbits all’alloro,<br />
wild boar and porcini soup, cut of<br />
lamb with vegetables sautéed with mint.<br />
“cooking techniques are the traditional<br />
from matera and lucca, which, in their<br />
own way, represent our territory in a gastronomic<br />
sense”–leone tells us. “For a<br />
cuisine like ours, of course, the choice of<br />
good ingredients is crucial. We rely on<br />
a network of local suppliers with whom<br />
we’ve already consolidated.”<br />
another aspect to consider is the<br />
storage of food in the fridge. Food should<br />
be vacuumed, and maybe after a passage<br />
in the blast chiller, if you anticipate long<br />
periods of “rest”. “Due to the frequent delivery<br />
and predictions that we can make<br />
on the number of customers who’ll come<br />
to eat; and thanks to our experience,<br />
we can minimize the need for conservation<br />
and consume immediately fresh<br />

meats such as pork and poultry, then, we<br />
must pay attention to avoid cases of salmonellosis.<br />

of meat can also enhance local and indigenous<br />
breeds, in addition to traditional<br />
recipes or more creative thought. It ‘s the<br />
case of the chianina or fassona, but also<br />
the breed Podolica transhumant, as the<br />
famous chef Pietro lecce from la tavernetta<br />
is doing. la tavernetta is a great<br />
restaurant in camigliatello, on the Sila<br />
mountain, calabria, (www.latavernetta.<br />
info).<br />
the choice of raw materials is based<br />
on a careful search for quality and the<br />
use of local produce sourced as much as<br />
possible through the short die. at la tavernetta<br />
you can eat a good transhumant<br />
Podolica meat. “the Podolica”– lecce<br />
says –”is a breed of cattle reared mainly<br />
in the inland areas of the south, from<br />
which you get good quality meat and<br />
milk in large quantities. We are talking<br />
about amount of cattle with an exceptional<br />
ability to adapt to harsh environments.<br />
this breed is today in the middle<br />
of a project of the consorzio a.Pro.zoo’s<br />
valorization that reunite about twenty<br />
farmers in the province of cosenza with<br />
5 thousand leaders enrolled in the zoo,<br />
also supported by the Park of Sila”. Farmers<br />
share the goal of revaluating and<br />
optimize the production to offer certificated<br />
meats, which are well checked<br />
out during all the productive steps. the<br />
specification lays down precise rules for<br />
the duration and temperature of aging,<br />
as well as for the storage and selling.<br />
about 600 capes go to slaughter after the<br />
transhumance: 2 years old Podolica calves.<br />
“the 35% doesn’t do stabilization in<br />
the stable”, adds lecce “therefore, these<br />
animals, which have the choice to move<br />
free, have some less fat”.<br />
among the dishes of this excellent<br />
row material, at la tavernetta we can<br />
find fusilli al ferretto with ragù (bolognesa<br />
souce) di Podolica, smoked ricotta and<br />
red crunchy onion from tropea; or the<br />
tasty regal boccone with Podolica fillet<br />
on bread crust, with cappell of porcine<br />
Silano, mandarin jelly and strips of violet<br />
cabbage and ristretto fo figs honey; or<br />
more simple dishes, from guanciotte alla<br />
lingua, like the millefoglie of Podolica’s<br />
lingua.<br />
a similar project to develop the<br />
meat has been promoted recently by the<br />
province of grosseto. on top of the initiative<br />
we have the macchiaiolo pork,<br />
the maremmani cattle and the lamb<br />
of maremmana’s sheep. vagal’s project<br />
has the goal to promote the use of these<br />
meats among the local restaurants.<br />
the first workshops were held on July<br />
at Follonica, Scansano, Seggiano and<br />
Pitigliano. these meats can be exalted<br />
on dishes of the cuisine tradition with<br />
other typical products, such as maremma’s<br />
saffron, the cece from grosseto,<br />
the bean cannellino from Sorano. In<br />
other words, when we have to tell someone<br />
about a country, meat surely won’t<br />
be ever scared by the comparison with<br />
his renowned enemy fish.<br />

W e love fatty! this is the catchphrase<br />
used by Dario cecchini,<br />
very well known butcher from Panzano<br />
in chianti is as timely as ever, as the fortune<br />
of restaurants specialized in meat.<br />
the statistics confirm that: us Italians<br />
do like meat and we consume on average<br />
of 92 kg per person per year. Danes<br />
beat us, but we overcome the english<br />
population. although they have the paternity<br />
of roast beef, they consume only<br />
19 kg of beef per year, compared to nearly<br />
23 of the Italians (2009 data, source:<br />
eurostat /assocarni). and since in the<br />
restaurant business, specialization is a<br />
factor that differentiates and rewards, it<br />
is not surprising that the restaurant’s owners<br />
have caught the trend of the “meat<br />
theme”restaurants. they have multiplied:<br />
for example roadhouse grill (cremonini<br />
group) has more than 36 steakhouse<br />
in Italy, the last of which opened<br />
in moncalieri with a turnover that got a<br />
double-digit growth…<br />
meat is actually the strongest aspect<br />
of the elegant restaurant barbacoa (mi),<br />
tenth churrascaria in the world from the<br />
brazilian group barbacoa, as well as the<br />
first that the group inaugurates in europe<br />
(barbacoa.it) a refined restaurant<br />
(the price is around 70 euro for a dinner<br />
à la carte), which has got a wide space<br />
between tables, in order to get an easy<br />
passage for the passadores, waiters who<br />
bring on the tables the long vertical
spiedini (meat skewered on a stick) of<br />
“rodizio”, and to allow the clients to eat<br />
comfortably. at barbacoa the rodizio (39<br />
euro) is “all you can eat”: about fifteen<br />
waiters walk around the restaurant with<br />
the spiedi; and the red or green token of<br />
each commensal is the signal of “stop”or<br />
“keep on putting meat on my table”.<br />
there are about 14 tastes, most of them<br />
are the beef’s ones of different cuts, with<br />
suggested names: picanha, costela, fradignha,<br />
alcatra, cupim. they also have<br />
lamb, chicken, pork, turkey, and sausages.<br />
Few specialties need long cooking<br />
time (for example the cupim, the gobba,<br />
that needs a 4 hours cooking time.) everything<br />
is grilled at the moment, while<br />
the costumer can serve himself from the<br />
buffet.<br />
It has a strong expertise in the world<br />
of butcher the muu in Parabiago (muugrill.it),<br />
a restaurant of the marchiante<br />
family’s property, which is the company,<br />
that stocks up meat for many restaurants<br />
of the north of Italy. the same family is<br />
the holder of el bechee, another important<br />
stop for the meat lovers. the structure<br />
comes from the total destruction of<br />
a store in Parabiago, which from traditional<br />
butchery, it became a real little restaurant<br />
for about 30 people. anyways, it<br />
keeps being a butchery and gastronomy<br />
as well. a pleasant environment where<br />
there are few well-tended proposals in<br />
which the meat is the star. as an example<br />
the beef stew morellino of Scansano<br />
with polenta, the tagliata “all’antica”,<br />
and the tartare. usually loved by kids,<br />
the restaurant offers meatballs or the<br />
hamburger muu with French fries, where<br />
potatoes are the fresh ones and the meat<br />
is pulp selected minced and cooked at<br />
the moment.<br />
another case history success is the<br />
one of maxelà. It was born 8 years ago<br />
in genova replacing a butchery of which<br />
they kept the counter at the entrance,<br />
where now the cuts are shown, so the costumers<br />
can pick whatever they like and<br />
have it cooked (maxela.it). In few years<br />
the restaurants have become 10, one in<br />
genova, some in milan and rome, one<br />
in torino, livorno, modena e rimini.<br />
Here we are not in front of the traditional<br />
butchers, but – as roberto costa,<br />
one of the partner, explain us: “every<br />
restaurant’s got a butcher who advises,<br />
prepares the tartare, the carpaccios and<br />
the cuts that passes by the kitchen. this<br />
expert has a very important role for the<br />
sale and his formation is treated with<br />
special training.”<br />
What makes this little chain so successful?<br />
costa answers: “First of all the<br />
meat quality. In fact our stingiest point<br />
is row meat, such as tartare with a three<br />
ways knife (with crispy bacon, mediterranean<br />
or French), carpaccio or the<br />
mixture of raw meat. although the real<br />
difference is made by the dish that the<br />
guest gets surprise by, such as tripe, liver<br />
or brain, with which we have gotten in<br />
love many customers.”<br />
of course is very important the<br />
way they treat meat, like bovine female<br />
between 15 and 21 months of age who<br />
has not yet calved. an animal in a very<br />
particular hormone, which promotes organic<br />
growth and the storage of fat meat<br />
and then a particularly valuable, whose<br />
hindquarters (leg and loin) is frolled in 2<br />
to 3 weeks.”anyway, it takes just a brisk<br />
fire grill, good olive oil and salt to get a<br />
happy customer who enjoys good meat.<br />

Organic meat and consumer requests<br />

Traditional, super traditional, in<br />
terms of meat, Italians do not betray.<br />
If it is not bovine or pork, it will<br />
be chicken or rabbit, but something is<br />
changing. every year each Italian consumes<br />
about 92 kilos of meat, but vegetarians<br />
are growing exponentially. In 2000<br />
there was a marginal portion of the population,<br />
only 1.5 million, but according<br />
to an estimate by eurispes acnielsen revised<br />
in 2011 they were already 7 million<br />
and most likely they will be 30 million in<br />
2050, representing at least half of the population<br />
of Italy. the reasons for vegetarianism<br />
are many: religious, partly ethical<br />
but also healthy. “a few years ago a<br />
campaign of demonization of meat consumption<br />
- says andrea toscani administrator<br />
Salsocarni ltd.-were headed by<br />
well-known oncologists who organized<br />
a strong media campaigns discouraging<br />
people from eating steaks and similar.<br />
“Health problems associated to the<br />
consumption of meat”is, in fact, an item<br />
within the famous online encyclopedia<br />
Wikipedia. over there is discusses the<br />
results of a prospective epidemiological<br />
study of over half a million people who<br />
have associated to the consumption of<br />
red meat and processed meats (sausages,<br />
ham, hamburger, corned beef, etc…) a<br />
modest increase of mortality in general,<br />
and in particular cancer and cardiovascular<br />
disease. at the same time,<br />
in the course of the article we report<br />
many other studies that confirm consequences<br />
of the intensive consumption of<br />
meat: coronary heart disease, diabetes<br />
and hypertension, metabolic syndrome,<br />
disease creutzfeldt_Jacob, excessive<br />
amounts of vitamin a in the liver. currently<br />
the meat represents the 21.5% of<br />
the Italians’ purchases, but we must assume<br />
that there will not be like this for so<br />
long. It ‘important to understand what is<br />
going on in the imagination of this product<br />
and try to get adapted.<br />
according to the Ismea analysis,<br />
ethics sustainability are at the center<br />
of consumption choices in parallel with<br />
the sensitivity to local products and kilometer<br />
zero. the rest of the nutritionists<br />
recommend to vary the diet and to eat<br />
meat only two or three times a week.<br />
and ‘reasonable to think that those<br />
who choose this orientation prefer to<br />
buy once a week a slice as being of high<br />
quality, that is, more and more organic.<br />
according to the data Sinab 2011 in<br />
Italy, there are 217,449 livestock farms<br />
(of which 4,838 are breeding), 1.3% less<br />
than in 2000. around 193,675 cattle are<br />
reared in Italy (-6.4% on 2010), 32,400<br />
pigs (+10.2%), 706,000 sheep (+4.3%)<br />
and 2.8 million poultry (+11.7%).<br />
In the organic farm any veterinary<br />
care uses herbal or homeopathic products<br />
and antibiotics that may leave<br />
residues. In foods are used only if essential<br />
to save the animal’s life. In this way,<br />
organic farms can produce more healthy<br />
and natural products, without the presence<br />
of toxic waste, and helps preserve<br />
agricultural land increasingly polluted<br />
by the indiscriminate use of chemicals.<br />
In this field there is a distribution circuits<br />
that favor organic products and<br />
enhance the short chain. In particular,<br />
“mangiocarnebio”is a chain project promoted<br />
by the emilia romagna Prober to<br />
promote and enhance the production of<br />
local organic beef.<br />
mangiobio since September has extended<br />
the delivery service of organic<br />
beef short chain also in the restaurant<br />
area and in school cafeterias of some<br />
centers in the province of bologna. this<br />
means that the organic world, even if<br />
split, it can slowly achieve a question<br />
that is becoming more pressing. and it<br />
does so not only in specialized channels,<br />
such as stores of organic chains, buying<br />

groups and specialty restaurants; but it<br />
does it also across markets and weekly<br />
markets increasingly crowded conscious<br />
consumers.<br />
above all, we need to be aware of<br />
the fact that the so-called farm animals’<br />
steak (27 billion head all over the world)<br />
has a high environmental cost. according<br />
to Fao data a kilogram of beef requires<br />
15,000 liters of water and a half<br />
and is responsible, in varying percentages<br />
between 14 and 18% of greenhouse<br />
gas emissions. back in vogue as the<br />
time of the First World War the meatless<br />
monday an international campaign<br />
_that encourages us not to eat meat on<br />
mondays to improve their health and<br />
the health of the planet. Since 2009, the<br />
city of ghent in belgium is the first city<br />
with a day while officially vegetarian,<br />
while in march of this year the croatian<br />
government on monday ruled out the<br />
meat from the menu of the ministry of<br />
environment.<br />
So, do not think that the downturns,<br />
currently in place, are a result of the economic<br />
crisis.<br />
of course with the fear of the crisis<br />
the price is the variable of the truck; nevertheless<br />
one Italian out of five choose<br />
organic products so he’s willing to pay<br />
more for his health and the environment’s<br />
protection. all this would seem<br />
to predispose to a revolution bio as well<br />
in the Horeca channel. “the bio, however,<br />
does not work well - continues<br />
toscani in harmony with the views of<br />
all the other interviewees in this article<br />
- naturally organic products and thus<br />
the flesh are requests, some farmhouses<br />
and for almost all school canteens and<br />
hospitals. the restaurant’s owner looks<br />
for product quality assess, the quality of<br />
unusual meat by factors, such as the type<br />
of animal, the conditions in which he<br />
lived and what he ate in the barn. this<br />
determines, in fact, that fat ratio lean,<br />
which determines flavor and yield of a<br />
steak or a stew”.<br />

enough. It is actually from this one<br />
where derives the term “marinating”, a<br />
technique of preparation - it is under-<br />

stood since ancient times - it was very<br />
useful to maintain, soften and flavor ingredients.<br />
Water and salt, namely brine,<br />
liquid to which were subsequently added<br />
acid ingredients (lemon, vinegar, wine)<br />
that promote the conservation and reduce<br />
bacterial proliferation. these were the<br />
antics sources. today the classic marinades<br />
are something articulate and imaginative,<br />
not essential to preserve, but widely<br />
used by professionals to accentuate<br />
the flavors, flavor ingredients or perform<br />
a new kind of precooking, which reduces<br />
the times of the actual cooking.<br />
If oil and lemon are the basis of the<br />
classic marinades, (be careful to calibrate,<br />
you can overpower the delicate flavors),<br />
the possible variations are endless<br />

to meet the original taste of each ingredient,<br />

by the chef andrea ribaldone, is about.<br />
the chef was formerly starred by la Fermata<br />
Spinetta in marengo. He is now in<br />
Japan for new dining experiences. the<br />
chef explores the possibilities of dry or<br />
liquid marinade meat, fish and even vegetables<br />
or fruits.<br />
essential in this approach to modern<br />
marinades, is the use of vacuum. From a<br />
physical point of view, conditioning with<br />
vacuum meat or fish together with the<br />

for 40 minutes. Let decanted in order to get the<br />
2 parts divided.<br />
FOR TOMATOES AND RASPBERRY’S PULP:<br />
Use the tomato pulp derived earlier from<br />
the preparation of the tomato oil, fresh<br />
raspberries 50 g, 20 g oil, 0.1 g sea salt,<br />
white pepper 0.1 g.<br />
Method: Blend all the ingredients. Place it<br />
on a sheet of baking paper and let it dry for 1<br />
hour in a convection oven, gently, with valve<br />
open at 70°. Put in a jar and store.<br />
FOR THE MEAT: 400 g beef (muscle, unfat,<br />
unnerved and gotten rid of coating bands), 90 g<br />
of whole sea salt, 30 g of brown sugar bio,<br />
1 liter of sparkling water.<br />
Procedure: massage the meat with a manual<br />
thousand needles so the meat is well shredded.<br />

FOR WHOLE OLIVES FOCACCIA<br />
First phase: 20 g strong flour (w400), 30 g<br />
whole meal flour, 3 g brown sugar, 4 g brewer’s<br />
yeast, 10 g low fat yogurt, 15 g water. Mix it<br />
quickly and let it stand for <strong>24</strong> hours at +4 in<br />
a refrigerator well covered and with a weight<br />
on top.<br />
Second stage: the next day joining 1 g brewer’s<br />
yeast, 50 g flour, 35 g water, 20 g of black<br />
olive patè, 2 g of dried smoothies porcini<br />

years due to price’s increase, which reached<br />
100%. However, sheep and goat’s<br />
market is recovering thanks to the lower<br />
prices. anyway, the consumption of<br />
this meat is concentrated mainly during<br />
the easter season, except for the carré,<br />
which gets cut required throughout the<br />
whole years. the company, founded as a<br />
manufacturer of gut over the years has<br />
expanded its horizons to countries rich<br />
in raw materials, such as South america,<br />
australia, canada, the united States,<br />
and asia. Its products include beef, pork,<br />

especially at a time like the present<br />
one. anyway, above all it is tangible<br />
evidence of a hard work, targeted to<br />
specific goals, conducted with criteria,<br />

and of course based on the incentive to<br />
continue with determination on the undertaken<br />
road.<br />
this is the important budget resulted<br />
from the third commercial meeting<br />
between the members of cooperativa<br />
Italiana catering, which took place on<br />
September 22nd. Several business areas<br />
were observed: the meat one, which<br />
at the beginning of the year is followed<br />
with good results by a person who specifically<br />
takes care of it. about the alimentary<br />
part, the new christmas package<br />
were presented; then new references for<br />
the cold cuts. more challenging is the<br />
ichthyic sector. the visit to the asian<br />
Serafood exposition, which was held in<br />
Hong Kong, from the 11th to the 13th of<br />
September, has allowed people to get in<br />
touch with companies and associations<br />
of producers from thailand, chile and<br />
South africa and also to consider their<br />
offer. at the same time, was taking place<br />
the interesting restaurant & bar, addressed<br />
to the Horeca’s operators. cIc<br />
wants to maintain the quality and competitiveness<br />
of frozen products, of course<br />
with fish at first place: an area that seems<br />
complex because fragmented in several<br />
markets around the globe. the months<br />
of September and october are crucial for<br />
this sector: as a matter of fact it is the<br />
period of fishing for many countries and<br />
to all major events in the sector, which<br />
will be closely monitored in order to evaluate<br />
and select suppliers that can ensure<br />
on time delivery and, qualitatively constant,<br />
with the proper quality/price ratio.<br />

NOVAL, the eVOLutiON<br />

NOVAL was born in 1973, a new organization<br />
from Orbassano (TO), that sells food. The<br />
company has invited all the customers<br />
to visit the new shed, which has been<br />
extended from 1500 to 5000 square meters.<br />

where many vendors have introduced their<br />
new products (and not only) responding to<br />
the demands of the operators. During these<br />

La crisi economica non rispar-<br />
mia il mercato italiano della carne, dove a guidare le scelte e gli<br />
acquisti dei consumatori una volta tanto non è il bollettino sanitario,<br />
ma il borsellino. E così, a volte, le strategie di acquisto seguono<br />
la strada della convenienza a discapito della qualità. «<strong>Il</strong> nostro<br />
settore affronta la crisi spostandosi sui mercati alla ricerca della<br />
convenienza per non dover rinunciare alla quantità - dice Roberto
testo di Manuela Soressi<br />
Zanobi, responsabile amministrativo di Formasal -. Di fatto gli italiani<br />
stanno considerando prodotti provenienti da Paesi come la Polonia<br />
o l’Est europeo in genere, per poter mantenere il prezzo e non<br />
rinunciare ai margini, visto che aumentare le cifre sul menù significa<br />
rischiare di perdere completamente i clienti». La crisi c’è e si vede.<br />
Nei consumi fuoricasa, a parità di uscite, si spende meno e i secondi<br />
piatti, che sono più cari, sono quelli a cui si rinuncia più facilmente.<br />
Ma «non crediamo che sia solo una questione di crisi economica<br />
- avverte Andrea Toscani, amministratore e responsabile carni di<br />
Salsocarni -. In verità stiamo andando sempre più verso consumi<br />
di tipo europeo. Anche in paesi ricchi come Austria o Inghilterra il<br />
consumo del bovino come lo consideriamo noi è riservato alle occasioni<br />
di festa mentre normalmente si consumano altri tipi di carne,<br />
come polli, conigli, tacchini e suini».<br />
Nuove abitudini<br />
È il caso di dire che è nito il tempo delle vacche grasse? Di sicuro<br />
qualcosa sta cambiando nelle abitudini mangerecce degli italiani.<br />
Tuttavia il consumo di carne è ancora sensibilmente alto. Dagli anni<br />
’60, a seguito del boom economico, ma anche di campagne che puntavano<br />
a valorizzarne gli aspetti nutrizionali, è cresciuto del 180%<br />
no ad arrivare a quota 95 chili a testa ogni anno. Rispetto ad un<br />
secolo fa abbiamo bisogno del 1000% in più di energia per mettere<br />
in tavola il nostro “pane” quotidiano. Nessun cibo ha il costo ambientale<br />
della carne: 1 chilo di manzo richiede oltre 15mila litri di<br />
acqua. Per quello che riguarda il consumo di carne è necessario fare<br />
attenzione e cercare per quello che è possibile di organizzare il mercato<br />
soprattutto perché per questo tipo di consumi siamo dipendenti<br />
dalle importazioni.<br />
Importare, infatti, è d’obbligo per un Paese come il nostro che riduce<br />
sempre di più allevamenti e macellazione e che è storicamente incapace<br />
di coprire la domanda interna. <strong>Il</strong> prodotto locale copre per<br />
circa il 50% la richiesta interna mentre le carni arrivano (per quello<br />
che riguarda la Comunità Europea) da Germania, Irlanda, Olanda,<br />

dal 2009 e da allora ha consolidato sempre più la sua posizione fino<br />
a raggiungere nel 2011 una quota di mercato pari al 23,8%, (Fonte:<br />
ubifrance da dati istat - dogane italiane). in termini di volumi, le<br />
esportazioni francesi di carne bovina refrigerata verso l’italia si sono<br />
attestate a oltre 92.271 tonnellate nel 2011. (+ 1% sul 2010; +4.8%<br />
crescita media annua dal 2007 al 2011 - fonti: elaborazione sopexa<br />
- dogane francesi). anche stati uniti e nuova zelanda si stanno affacciando<br />
sul mercato delle importazioni soprattutto per quello che<br />
riguarda quest’ultima nel settore avicunicolo.<br />
I semilavorati, una risorsa<br />
«dalla nuova zelanda - dice manuel murgia titolare di Gruppo alimentare<br />
sardo - arrivano anche ottimi agnelli congelati che già a<br />
pezzi consentono al ristoratore di avere sempre disponibile e nella<br />
quantità desiderata il prodotto necessario, permettendo così una migliore<br />
ottimizzazione dei costi e una grossa riduzione degli sprechi».<br />
quello della porzionatura è un tema che ormai investe il settore<br />
anche nel fresco. «il prodotto pronto e semi lavorato - aggiunge Fiorenzo<br />
santini presidente di speca alimentari - è una grande risorsa<br />
nelle moderne cucine dove il tempo scarseggia, le dimensioni delle<br />
cucine si sono ristrette e manca il personale preparato ad una adeguato<br />
taglio e sfilettatura della carne come del pesce. ecco allora<br />
che il mercato sopperisce con prodotti pronti che vanno a colmare<br />
le lacune createsi, per vari motivi, nella filiera».<br />
resta però da considerare la scarsa consapevolezza che i consumatori<br />
italiani hanno della filiera e che, dopo gli scandali alimentari legati<br />
alla produzione di carne, c’è molta diffidenza per il prodotto estero.<br />
«Con la velocità dei trasporti oggi la qualità non è tanto nel luogo<br />
di provenienza, ma nelle condizioni di allevamento che andrebbero<br />
conosciute e fatte conoscere - dice Carlo livi amministratore di<br />
markal spa - perché un buon filetto non è una cosa che si improvvisa,<br />
ma necessita di una buona programmazione dall’allevamento<br />
dell’animale alla sua macellazione. l’organizzazione distributiva delle<br />
varie parti consente una migliore gestione della materia e quindi<br />
ottimizzazione della produzione».

laddove, come nel comparto avicolo per esempio, si è lavorato ad una<br />
strategia di marketing i risultati sono sempre stati positivi. «quando si<br />
parla di qualità della carne non bisogna mai dimenticare il fattore soggettivo<br />
, cioè il gusto personale - dice roberto Capecchi amministratore<br />
di Capecchi -. nella stessa italia si registrano diversi tipi di preferenze, ad<br />
esempio, per quel che riguarda il bovino, nel lazio si preferisce una vacca<br />
(naturalmente ben preparata alla macellazione) mentre in altre regione<br />
amano il vitellone. Gli stessi francesi che in un certo senso hanno creato<br />
il bovino da carne consumano moltissimo la carne di vacca». Paese che<br />
vai piatti che trovi, anche perché le ricette regionali sono tante e per<br />
ciascuna esiste un tipo di taglio particolarmente adatto. e in tema di cultura<br />
del territorio molti sono gli chef che scelgono di riscoprire antiche<br />
ricette regionali. «a guardare l’altra faccia della medaglia chi sceglie di<br />
mantenere livelli di qualità punta alla riscoperta di antiche ricette che<br />
valorizzano i tagli meno pregiati - continua Zanobi -. il che però richiede<br />
alla ristorazione un maggiore impegno nella ricettazione perché ad esempi<br />
i quarti anteriori devono essere ben lavorati per risultare accattivanti<br />
come una entrecote o un filetto al pepe verde».<br />
Non solo tagli pregiati<br />
«in italia dalla fine degli anni ‘70 i consumi di carne hanno subito un<br />
grosso incremento e ci siamo abituati a mangiare parti pregiate e che<br />
sono anche più facili da cucinare - dice italo nebiolo - sia per la casalinga<br />
che per il ristoratore. Del pollo si consumano i petti mentre per il<br />
consumo di altre parti ci si affida a semi preparati già impanati e ricettati,<br />
che consentono alla produzione di utilizzare e mettere facilmente<br />
in commercio le altre parti dell’animale». eh sì, perché un pollo ha solo<br />
due cosce e un bovino solo due quarti posteriori, un suino due prosciutti<br />
e tutto il resto non può venire buttato. «Credo infine - aggiunge Carlo<br />
livi - che gli operatori possano giocare un ruolo importante nel far conoscere<br />
e valorizzare il prodotto italiano, e nel mantenere e sviluppare<br />
questo settore creando progetti a lungo termine grazie connessioni tra i<br />
produttori e gli chef. Garantire un sistema di vendita adeguato permette<br />
ad allevatore e macellatore la possibilità di avere i giusti margini».

I modelli di consumo che piacciono al cliente<br />
Anche in questo pur difficile<br />
momento economico, l’alimentazione riveste sempre un ruolo importante<br />
per gli italiani che nel cibo trovano un momento di convivialità<br />
e piacere. Apprezzano il multietnico, ma alla globalizzazione dei consumi<br />
alimentari antepongono un atteggiamento di consapevolezza e<br />
salute, che gli fa preferire la dieta mediterranea e la ricerca di gusti<br />
“veri”. È una tendenza che si riscontra tra le mura di casa, ma soprattutto<br />
al ristorante dove, osserva Costantino Costa, responsabile filiale<br />
per il mercato Italia di Danish Crown Italy, »lo chef italiano vuole<br />
esprimere al meglio la propria creatività e la propria concezione di<br />
buona cucina. Per questo non ricerca solo prodotti preconfezionati<br />
che hanno un buon mercato all’estero, ma un’eccellente materia prima,<br />
da elaborare personalmente». L’azienda si occupa delle vendite<br />
delle carni provenienti dai macelli di Danish Crown e importa altri<br />
marchi, tra cui l’irlandese Dunbia: con un fatturato annuo di circa<br />
700 milioni di euro, è tra i maggiori produttori europei di carni di<br />
bovino, suino e ovino. Le prime rimangono le più richieste. «Anche<br />
in questo momento di contrazione del mercato - riprende Costa -, lo<br />
chef sceglie la qualità; al più chiede tagli meno nobili, ma non abbandona<br />
un fornitore che lo soddisfa puntualmente con un prodotto<br />
dalle caratteristiche eccellenti in ogni periodo dell’anno». Positivo<br />
l’andamento anche della carne ovina, che vede le richieste più orien-<br />

«Gli animali vengono nutriti a grano per 300 giorni: un processo<br />
che ottimizza il gusto oltre ad aumentare la naturale<br />
tenerezza della carne grazie a una notevole marezzatura<br />
- ci dice Lara Messie, direttore acquisti e vendite -.<br />
Abbiamo l’esclusiva di questo prodotto che si rivolge a<br />
clienti che cercano un migliore rapporto qualità/prezzo<br />
rispetto alla carne di Wagyu, leggermente più marezzata,<br />
ma molto più cara». Negli ultimi tempi, gli acquisti<br />
degli operatori del mondo della ristorazione vedono riequilibrati<br />
tagli poveri e nobili: accanto al Black Angus<br />
- che rimane il più richiesto grazie alla sua continuità<br />
qualitativa - il catering ha scoperto tagli secondari di<br />
costo inferiore, che danno comunque un buon risultato.<br />
Un esempio è l’aletta, che si può proporre come tagliata, togliendo<br />
il nervo centrale. L’azienda lavora con 30 macelli nel mondo e ha<br />
un volume annuo di 90 tonnellate di carni fresche e congelate, che<br />
si rivolgono al mercato europeo.<br />
Selezione continua<br />
Merlo Ercole è una società specializzata nell’importazione e distribuzione<br />
di tagli refrigerati e congelati di carni bovine sudamericane: una<br />
realtà che prosegue da 76 anni e che ha quali obiettivi la qualità e il<br />
servizio. «Un aspetto interessante delle carni sudamericane è la tendenza<br />
a una diminuzione dell’età degli animali, che conferisce una sempre<br />
maggiore tenerezza delle carni - afferma Claudio Merlo, amministratore<br />
delegato -. Inoltre, la continua selezione delle razze consente di ottenere<br />

Le tante alternative alla carne bovina<br />

Un’alimentazione degli<br />
animali opportunamente calibrata ha permesso nel<br />
tempo di ottenere carni sempre più pregiate. Uno<br />
studio presentato di recente sui prodotti del Regno<br />
Unito, mostra infatti come da un contenuto di grassi<br />
tra il 1950 e il 1980 del 25% per il manzo, del 30%<br />
per il maiale e del 31% per l’agnello si sia passati negli<br />
anni ’90 rispettivamente al 20%, 20% e 26%, che<br />
ripuliti dei grassi, scendono ulteriormente al 15%,<br />
8% e 18%, e altri si disperdono durante la cottura. Ma con la parte<br />
lipidica non se ne va il gusto: in tavola la carne si presenta saporita e<br />
nutriente. A proposito di “pulizia”, Renzo Bervini, titolare di Bervini<br />
Primo, osserva che questo fenomeno procede anche nel fuoricasa, un<br />
settore in cui troppo spesso si investe con super cialità, alla ricerca del<br />
business più che della qualità. Ma in quel 10% in cui l’ultima ricerca<br />
Istat identi ca la spesa degli italiani per alberghi e ristoranti, il consumatore<br />
vuole trovare qualità, meglio in un rapporto ottimale con il<br />
fattore prezzo, al quale è sempre più sensibile. «Si tratta di una “quadratura<br />
del cerchio” che solo un vero professionista sa fare - afferma<br />
Bervini -. Oggi molti ristoratori chiedono tagli meno nobili, ma solo<br />
uno chef veramente padrone del suo mestiere li sa trasformare in piatti<br />
gustosi, che soddisfano il cliente e dunque lo delizzano. Chi non affronta<br />
il settore in modo serio e con professionalità rischia grosso». La<br />
ristorazione, soprattutto quella che si rivolge ai grandi numeri (mense,<br />
ristorazione commerciale) sta riscoprendo la carne avicola. Penalizzato<br />
negli ultimi anni a causa di incrementi dei prezzi che hanno raggiunto<br />

ha ampliato i propri orizzonti verso Paesi ricchi di materie prime come<br />
l’america del Sud, l’australia, il Canada, gli Stati uniti, fino all’asia.<br />
la sua offerta comprende oggi carne bovina, suina, ovocaprina e pollame,<br />
prodotti ittici e verdure surgelate.<br />
<strong>Il</strong> primato della rintracciabilità<br />
la certezza del made in italy è un elemento al quale il consumatore<br />
finale guarda con attenzione, soprattutto se accompagnato da elementi<br />
come la tracciabilità. «il Gruppo martini è composto da due divisioni:<br />
una si occupa di mangimistica e allevamento, la seconda della commercializzazione<br />
delle carni suine, avicole, di coniglio e in piccola parte<br />
di bovino. Per questo siamo in grado di individuare e garantire ogni<br />
parte della filiera produttiva e già nel 1999 abbiamo realizzato un progetto<br />
di rintracciabilità», afferma Fabrizio Goracci, direttore commerciale.<br />
l’azienda è approdata da poco al catering, che si mostra ricettivo<br />
nei confronti della carne di coniglio, mentre è più prevenuto nei confronti<br />
di quella di maiale. «un nostro motto rispetto a questo prodotto<br />
è “-40% di grassi, stesso gusto” - riprende Goracci - i nostri sono suini<br />
pesanti, utilizzati per produrre prosciutti Dop e la continua selezione ha<br />
individuato specie dalle carni sempre più magre e gustose». Frattanto<br />
l’azienda propone prodotti delight e sul sito offre ricette realizzate da<br />
chef: spunti che i “colleghi” possono cogliere per dare più appeal a carni<br />
spesso ingiustamente trascurate.

Benigno e attiva nell’area orientale del mercato<br />
statunitense da 25 anni. È entrata a far parte<br />
dei soci della Cooperativa Italiana Catering e<br />
dal prossimo gennaio distribuirà i prodotti a<br />
marchio Qualitaly: è un passo molto importante<br />
per il gusto e la qualità tipici del made in Italy<br />
fi rmati Cic, che sbarcano oltreoceano, pronti<br />
a soddisfare gli chef più esigenti.<br />

Tra risultati e prospettive<br />
Riuscire a centrare i risultati messi a pre-<br />
ventivo per il primo semestre è motivo di soddisfazione, soprattutto<br />
in un periodo come l’attuale, ma soprattutto è la prova tangibile di<br />
un lavoro intenso, mirato a concreti obiettivi e condotto con criterio,<br />
dunque lo sprone a proseguire con determinazione sulla strada intrapresa.<br />
È questo l’importante bilancio scaturito dalla terza riunione<br />
commerciale tra i soci della Cooperativa Italiana Catering che si è<br />
svolta il 22 settembre scorso. Sono stati osservati i diversi settori commerciali:<br />
quello della carne, che dall’inizio dell’anno è seguito con<br />
buoni risultati da una persona ad esso dedicata; per l’alimentare sono<br />
state presentate le nuove confezioni natalizie, infine nuove referenze<br />
per i salumi. Più impegnativo il comparto ittico. La visita all’Asian<br />
Seafood Exposition che si è svolta a Hong<br />

In parallelo si è svolta l’interessante Restaurant & Bar, rivolta agli<br />
operatori dell’horeca. Cic vuole mantenere alta la qualità e la competitività<br />
dei prodotti surgelati, tra cui ha un posto di primo piano il<br />
pesce: un settore quantomai complesso, perché frammentato su più<br />
mercati a livello planetario. I mesi di settembre e ottobre sono<br />
cruciali per questo comparto: è infatti il periodo della pesca per<br />
numerosi Paesi e si svolgono le principali manifestazioni di settore,<br />
che saranno attentamente monitorate, al ne di valutare<br />
e scegliere i fornitori in grado di assicurare forniture puntuali e<br />
qualitativamente costanti con il corretto rapporto qualità/prezzo.<br />
La programmazione operativa sarà realizzata nel corso della quarta<br />
e ultima riunione dei soci, a novembre. In chiusura una ri essione<br />
sul Dl <strong>24</strong> gennaio 2012 e l’impatto di una norma, l’articolo 62,<br />

giungla delle transazioni commerciali, ma di creare non pochi problemi<br />

NOVAL, L’EVOLUZIONE IN TEMPO DI CRISI<br />
<strong>Il</strong> 23 e <strong>24</strong> settembre sono state due<br />
giornate di festeggiamenti per la Noval - Nuova<br />
organizzazione vendita alimentari - di Orbassano<br />
(To) nata nel 1973. L’azienda ha invitato tutti<br />
i clienti a visitare il nuovo capannone, che da<br />
1.500 è stato ampliato a 5.000 mq.<br />
I numerosi convenuti hanno visitato i magazzini<br />
per poi accedere a un’area degustazione dove<br />
numerosi fornitori hanno presentato le proprie<br />
novità (e non solo) e risposto alle richieste degli<br />
operatori. In questi anni, il portafoglio prodotti<br />
è stato ampliato per incontrare al meglio le<br />
richieste dell’operatore del mondo dell’horeca e<br />
questo evento ha mostrato ai clienti l’ampiezza<br />
della gamma e la professionalità delle aziende<br />
partner. La partnership con i fornitori è cruciale<br />
nella fi losofi a Noval, non per nulla il suo titolare,<br />

Piz zerie ed “etnici” i più colpiti dalla<br />
situazione economica. Tengono le catene<br />
La riduzione dei consumi investe anche il<br />
fuori casa. E il comparto della ristorazione ne risente<br />
più dei bar. I dati del panel Crest di Npd Italia<br />
evidenziano un primo semestre 2012 caratterizzato<br />
dal segno meno. Calano, infatti, il numero di visite<br />
(-3,4%) e diminuisce anche il fatturato complessivo:<br />
-2,5% rispetto ai primi sei mesi dello scorso anno.<br />
L’unico segno più si registra nel valore dello scontrino<br />
medio (+1%), ma per effetto dell’in azione, che si<br />
è attestata per il periodo in questione attorno al 2%.<br />
Cambio di passo<br />
«Nel 2012 - afferma Matteo Figura, responsabile della<br />
business unit Foodservice di Npd Italia - assistiamo<br />
a un “cambio di passo” nei comportamenti dei<br />
consumatori. Se no allo scorso anno, infatti, si assisteva<br />
a un progressivo slittamento dalla ristorazione<br />
al bar, con l’obiettivo di mantenere il numero di<br />
visite riducendo la spesa, da quest’anno prevalgono<br />
le rinunce. <strong>Il</strong> calo delle visite, infatti, colpisce sia il<br />
full service (la ristorazione) sia il quick service (bar,<br />
fast food e take away).<br />
Un fenomeno cominciato nell’ultimo semestre dello<br />
scorso anno e che temiamo proseguirà per tutto il<br />
2012». S ducia e incertezza pesano in maniera signi-<br />
cativa sull’andamento del mercato: «<strong>Il</strong> Consumer<br />
Con dence Index, indicatore internazionale che<br />
misura il livello di ducia dei consumatori - afferma<br />
Figura - nel giugno di quest’anno in Italia è sceso a<br />
-42, un valore mai toccato in precedenza».<br />
Non bastasse la situazione di mercato, a contribuire<br />
al calo ci si sono messi pure fattori esterni: «<strong>Il</strong> primo<br />
semestre dell’anno - afferma Figura - è stato caratterizzato<br />
anche da eventi eccezionali, come la nevicata<br />
di febbraio e il tragico terremoto dell’Emilia, che<br />
hanno sicuramente avuto un impatto negativo nei<br />
consumi del fuori casa».<br />
Tengono le catene<br />
Rispetto al recente passato, un’altra poco gradevole<br />
novità è che il calo del numero di visite ha investito<br />
tutti e tre i principali segmenti in cui Crest divide<br />
il comparto della ristorazione. La riduzione, infatti,<br />
ha coinvolto anche le pizzerie e i ristoranti etnici.<br />
Quest’ultimi sono i più penalizzati (-3% contro il<br />
-2,1% dei ristoranti classici e il -1,8% delle pizzerie).<br />
Si conferma, invece, la maggior capacità delle insegne<br />
di stare al passo con il mercato, anche in tempi di<br />
crisi: «La ristorazione organizzata di marca - afferma<br />
Figura - nel primo semestre dell’anno ha continuato<br />
a crescere, seppure a un tasso dimezzato rispetto al<br />
recente passato. Parliamo comunque sempre di un +2-<br />
3% su base annua». E un dato così non è affatto male.<br />
Quanto alle occasioni di consumo, «la riduzione nel<br />
numero di clienti - dice Figura - colpisce in maniera<br />
sostanzialmente simile sia il pranzo sia la cena». Gli<br />
italiani, insomma, stringono la cinghia. E la dieta,<br />
stavolta, purtroppo non c’entra.<br />

Catering è una realtà che da oltre<br />
dodici anni raggruppa aziende operanti nel<br />
servizio alla ristorazione (grossisti alimentari),<br />
con il fi ne di affermare l’importanza della<br />
contrattazione commerciale per l’acquisto<br />
centralizzato di beni e servizi, nonché di promuovere<br />
lo sviluppo di marchi privati per una<br />
identifi cazione unica dei prodotti nei territori<br />
di rispettiva pertinenza dei Soci, con una ridefi<br />
nizione della fi liera distributiva che privilegi i<br />
parametri qualitativi dando sicurezza in merito<br />
alla provenienza degli ingredienti. Insomma<br />
l’intento è cercare di fare sistema in un settore<br />
di mercato molto frazionato e disgregato.<br />
Su questa base, desideriamo portare alla<br />
Sua attenzione alcune problematiche che a<br />
nostro avviso nascono dal tenore dell’art. 62<br />
del decreto liberalizzazioni (n.1 del <strong>24</strong> gennaio<br />
2012), che disciplina le relazioni commerciali<br />
in materia di cessione di prodotti agricoli e<br />
agroalimentari.<br />
Va premessa, trattandosi del settore distribuzione,<br />
una considerazione sulla più rimarchevole<br />
differenza tra la fi liera dell’HoReCa<br />
(Hotel-Restaurant-Cafè, cui facciamo parte) e<br />
quella della grande distribuzione (GD). Mentre<br />
quest’ultima (la GD) non ha l’onere dell’incasso<br />
delle transazioni poiché ha il contatto con<br />
il consumatore fi nale, e controlla direttamente<br />
o indirettamente la fi liera, con conseguen-<br />

CIC IN CAMPO PER L’ART. 62<br />
Relativamente alle implicazioni dell’articolo 62 del Decreto<br />
Legge n. 1 del <strong>24</strong> gennaio 2012 “Liberalizzazioni”<br />
pubblichiamo qui la lettera che la Cooperativa Italiana<br />
Catering ha recentemente inviato al Ministero delle Politiche<br />
Agricole, Alimentari e Forestali e al Ministero dello<br />
Sviluppo Economico, rimarcando le specificità della nostra<br />
filiera e chiedendo anche un anno di moratoria per il quadro<br />
sanzionatorio, in questo modo dando la possibilità al sistema<br />
di equalizzare le politiche di pagamento su 12 mesi<br />
te controllo dei fl ussi fi nanziari, la prima ha<br />
l’onere dell’incasso senza avere il controllo<br />
della fi liera, e di conseguenza non controlla la<br />
gestione del fl usso fi nanziario.<br />
In questo quadro, la possibilità per i nostri<br />
soci di assolvere in modo puntale le proprie<br />
obbligazioni verso i creditori è dipendente,<br />
che lo si <strong>voglia</strong> o no, dai comportamenti degli<br />
operatori a valle, vale a dire degli utilizzatori<br />
fi nali dei prodotti venduti dai nostri soci (ristoranti,<br />
pizzerie, bar-paninoteche e mense<br />
private, aziendali e statali, etc.): questi, notoriamente,<br />
almeno per il 60%, non applicano<br />
alcun tipo di regolamentazione alla gestione<br />
dei propri pagamenti; e ciò vale anche per<br />
le amministrazioni statali. Ne deriva che un<br />
Socio di questa cooperativa , non potendo<br />
fruire di nessun tipo di moratoria del quadro<br />
sanzionatorio previsto dall’art. 62, è costretto<br />
suo malgrado a ricorrere alla richiesta di<br />
concessione di maggior credito da parte del<br />
sistema bancario. Ovviamente il rivolgersi al<br />
sistema bancario, o ad altra forma di supporto<br />
fi nanziario, costituisce un’aggravante in<br />
termini di maggiori costi e, di conseguenza, di<br />
minor margine: si tratta di una situazione, già<br />
di per sé poco sostenibile in condizioni di crescita,<br />
che nell’attuale situazione economica di<br />
recesso si rivela assolutamente impraticabile<br />
se non a costi insopportabili.<br />
Né è invocabile il ricorso a procedure giudi-<br />
ziarie per il recupero del credito, i cui costi<br />
sono sproporzionati e i cui tempi superano<br />
abbondantemente i <strong>24</strong> mesi, con un risultato<br />
fi nale il più delle volte praticamente nullo. Lo<br />
strumento giudiziario in altre parole si palesa<br />
come arma assolutamente inadeguata a contrastare<br />
coloro che non possono, o addirittura<br />
non vogliono assoggettarsi ai termini di pagamento<br />
indicati nell’ Art. 62.<br />
Ci chiediamo allora in base a quali motivazioni<br />
per i soggetti della fi liera HoReCa non<br />
può essere prevista una moratoria del quadro<br />
sanzionatorio di 12 mesi, che consentirebbe<br />
di applicare condizioni di eguaglianza all’intero<br />
settore distributivo. A questo andrebbe aggiunta<br />
la possibilità di liberi accordi fra le parti<br />
con defi nizione dei tetti massimi superabili, in<br />
considerazione della realtà sistema esistente<br />
(Sistema mercato, bancario, controllo, giudiziario).<br />
Ci domandiamo infi ne come un sistema così<br />
penalizzante per una determinata categoria<br />
di operatori possa conciliarsi con il dettato<br />
costituzionale di libertà d’impresa e vada,<br />
in defi nitiva, contro i principi della libertà di<br />
concorrenza in pari condizioni fra gli operatori.<br />
